Immune system protein regulates sensitivity to bitter taste New research from the Monell Center reveals that tumor necrosis factor (TNF), an immune system regulatory protein that promotes inflammation, also helps regulate sensitivity to bitter taste. The finding may provide a mechanism to explain the taste system abnormalities and decreased food intake that can be associated with infections, autoimmune disorders, and chronic inflammatory diseases. In addition to its role in mediating inflammation, TNF has been implicated in the progression of varied diseases ranging from Alzheimer's disease to cancer. "Reduced food intake and associated malnutrition is a significant concern that affects the long-term prognosis of many people who are very ill," said senior author Hong Wang, PhD, a molecular biologist at Monell. "Our findings reveal that bitter taste is regulated by the immune system. Specifically, TNF may make sick people more sensitive to bitterness so that foods taste more bitter and less appetizing."

Comprehensive lifestyle changes, including more fruit and vegetables as well as meditation and yoga, were shown to reverse signs of aging at the cellular level for the first time in a study published today. Adopting a diet rich in unprocessed foods combined with moderate exercise and stress management over five years increased the length of telomeres, the ends of chromosomes linked to aging, according to a study of 35 men published in the Lancet medical journal. No previous study has shown the effect of lifestyle changes on telomere length, the authors said. Made from plants, it can replace eggs in everything from cakes to mayonnaise - without a chicken ever coming close to the production process. The team today started selling their ‘plant egg’, called Beyond Eggs, in Whole Foods in California - and say it could soon be available in supermarkets worldwide. DIY Hoisin Sauce-The Battle It is no secret that I am delighted when I find I can make a homemade version of a commercial product. Several months ago I found a recipe for Hoisin Sauce in a microwave book. The author indicated that the recipe had come from Recipezaar which is now Food.com. I thought I would go check the recipe out on the site. I decided to make both recipes and see if I liked one better than the other, and, of course, I had to make my own changes, too. So, try them both. The first recipe uses black bean sauce or peanut butter. Combine soy sauce, peanut butter, molasses, vinegar, sesame oil, garlic, onion powder in a glass measuring cup. DIY Hoisin Sauce-large quantity 1 c. beef broth (low sodium if possible) 1/2 c. low-sodium soy sauce 1/3 c. dry sherry 2 T. cornstarch 2 T. molasses 2 T. brown sugar 2 T. tomato paste 1-2 cloves garlic, crushed 1/2 t. ginger black pepper to taste Combine all ingredients in a 1 qt. glass measuring cup or microwave-proof bowl.
