You just mix honey, Dijon mustard, and olive oil together and pour it over chicken thighs in a casserole dish and bake until done. The chicken produces its own gravy with the honey and mustard, and the skin on the top gets crispy brown. Do you have a favorite lazy day chicken recipe? Apple Cranberry Stuffed Pork Roast Recipe | SimplyRecipes.com 1 Before starting on the pork, put the pork roast in the freezer for 30 minutes to make it easier to cut. While the pork is chilling, you can make the filling. 2 Bring all the filling ingredients to simmer in medium saucepan over medium-high heat. 2 Preheat oven to 350°F or prepare your grill for indirect heat. Open up the roast and continue to cut through the thicker half of the roast, again keeping 1/2 inch from the bottom. If necessary, pound the roast to an even thickness with a meat pounder. 3 Season the inside of the roast well with salt and pepper. 4 Place roast on a rack in a roasting pan, place in oven, on the middle rack. You can also grill the roast, using indirect heat either gas or charcoal. Cook for 45 to 60 minutes, until the internal temperature of the roast is 130 to 135 degrees. 5 Slice into 1/2-inch wide pieces, removing the cooking twine as you cut the roast.

Lentil soup is actually the very first dish I learned to cook, and I am still amazed at how easy it is to make something so much better than you get from a can. I'm also sentimental about this soup, so it will probably always be among my favorite things to make. I do prefer using bacon fat here—I spend extra on premium bacon so I always strain and save the rendered fat for making this soup. The smoky flavor it brings to the soup is a great complement to the earthy lentils, but butter and olive oil also work well. For a vegetarian version, just leave out the chicken and bacon fat (use olive oil instead). Chicken Lentil Soup Serves 8 to 10 Melt the bacon fat or butter in the bottom of a large Dutch oven over medium-high heat and add the onion, celery, carrots, and garlic.

Jenna's Journey: Chicken Roll Ups I have a great, easy and delicious new recipe to share with you! One of my favorite things to do in my limited free time is to search food blogs and food websites. I kept seeing recipes similar to the one I'm going to share but I didn't like half of the ingredients, and the ones I did like, Chris didn't. So here's my version of Chicken Roll Ups! First, I boiled 2 chicken breasts. Meanwhile, I let a block of cream cheese thaw out. I mixed the cream cheese with 1 1/2 cups of cheddar and 1 cup of Monterey jack and some salt and pepper. Once the chicken was cooked, Chris shredded it for me with his hands of steel, and we mixed it into the cheese mixture. Then I put the mixture on big, buttery, flakey crescent rolls. Wedding Weight Loss Soup This week was me and my husband’s 5th year wedding anniversary. Celebrating has brought back so many great memories. Especially, memories about what I ate and how I exercised during the weeks leading up to the big day. Unlike typical brides, my wedding dress was a little revealing and showed off my mid-section! Thinking about showing my stomach to all my friends and family scared the you know what out of me. I worked out 5 days a week. As I strolled down memory lane, a particular soup I made kept popping up in my mind… So I decided to make it yesterday in honor of our anniversary weekend. I ate this soup every week for a few months. This soup can easily be made vegan by adding one extra can of beans, omitting the chicken, and changing to vegetable broth which sometimes I do, if I make this on Tuesdays, the day that I give up meat entirely each week.
