Just because summer is winding down, does not mean that the barbeque will be put to sleep just yet. If you’re a die-hard griller, you know that there are still plenty of late summer nights left to enjoy the smoky taste only a barbeque can deliver. For years I have been the brunt of too many jokes at family barbeques, as I munch on salad while my family eats cheeseburgers and hot dogs (I am still not interested, Uncle Peter, but thanks for offering every single time for the last decade). Now, I have absolutely tried my best to make these before, but there are always problems, such as the patties falling apart while cooking, too dry, too moist, too “vegetarian-tasting”. Something totally magical happens when mashed potatoes are roasted and get nice and crispy on the outside, while staying soft and fluffy inside. I wanted to fill out these cakes with some greens/green vegetables. I went with broccoli, since I love potatoes and broccoli together, plus dill, since it’s just meant to be with potatoes. They turned out so good! There’s a spicy cashew sauce, too, which has some sour cream vibes and goes so well with everything else. Basil, Garlic, + Tomato Veggie Burgers Remember how I was just gushing about my love for cycling? Well, yesterday I fell off my bike. And when you fall off a bike with clipless pedals the bike goes right along with you. Meaning, it falls on top of you. Before I could unlatch my foot from the pedal I somehow rode off the sidewalk, got caught at the edge, and then fell flat over on the sidewalk. This doesn't dampen my love for cycling, I just found the timing to be funny. Of course there was a witness to the scene about 10 steps in front of me. My leg + arm are a little scuffed but nothing too bad at all. Now let's talk about these burgers. And this cheese. There is a time and place for cheese and this is definitely it. Gooey, melty, stretchy cheese. I'm kind of on a temporary hiatus from my go-to Mexican style flavors. This mix of flavors is exactly what I was looking for.
