One Minute Chocolate Mug Cake

One Minute Chocolate Mug Cake
On Saturday morning, I clicked the Foodbuzz twitter profile, fully expecting to see someone else as the winner of the “best baking blog” award. I never thought I’d see this: Best baking and pastry blog: @ChocCoveredKt My heart is filled with so much gratitude right now, towards everyone who took time out of their busy lives to vote for me. Because of you, I am the happiest girl on the face of the earth, and I can’t even find the right words to express just how grateful I am to you all. Note: You can also find a much larger healthy chocolate cake recipe–with secretly healthy chocolate fudge frosting–in The Chocolate-Covered Katie Cookbook. So instead, I baked you a cake. I could tell you that I slaved in front of a hot oven all day to make said cake. No, really. If you tried to sum up my blog in a dessert, this cake in a mug would be it: healthy–while still tasting ridiculously delicious, vegan (with a gluten-free option), and chocolate. Chocolate Hazelnut Morning Coffee [oops, sorry. I mean] Smoothie I don’t know about you, but I can’t start the day without a good cup of coffee. Not that I am a BIG coffee drinker, but I do need at least one cup as soon as I get out of bed, followed by another one a little later in the morning. In fact, on week days, I drink my first cup of coffee while working out, and I often wonder if there are others like me out there. I mean, coffee isn’t necessarily the first thing that comes to mind when one thinks of a refreshing drink to have during and intense work out…

Yogurt and Honey Olive Oil Cake I have so much to tell you about this cake. At its heart, it's humble — it comes together from a few pantry ingredients and bakes up to be far from a show-off. But slice into it and before you even take one bite, you'll suspect it's one of the most moist and tender cakes you've ever baked. www.aldentepasta.com/product-categories/fettuccines/ Perfect for any occasion, any recipe, whether it is chicken soup, fettuccine alfredo or simply pasta with fresh tomatoes, olive oil and Parmesan cheese. That makes us feel so good! pastamonial I used Al Dente egg noodles with beef stroganoff and liked the light pasta to counterbalance the heavy sauce. Thanks Al Dente!

Mixed Berry & Jasmine Tea Scones You can’t go wrong with scones for Mother’s Day. And you almost have no excuse not to make something home-baked, especially when you can consider these mixed berry scones laced with delicate jasmine come together in just twenty minutes with the help of a food processor. The recipe you see here is my base recipe for almost all my scones. Of course once in awhile, I’ll get over-indulgent and make them with a toffee and chocolate chip spin, but today I’m keeping it fruity with some mixed berries.

Hazelnut, Apple & Chocolate Buns It sounds a bit goofy and it’s mainly a PR-stunt but we actually have an official Cinnamon Bun Day in Sweden. It’s on the 4th of October. I don’t usually buy in to these things. All these Hug-a-Vegetarian-day/Eat-a-salty-pretzel-day/Jump-on-one-leg-with-a-blindfold-day … They are mostly just awkward.

Less-Loaded Potato Soup: Recipe Makeover The Irresistible Trifecta of starchy, creamy, and comforting pleasures found in loaded potato soup makes this warming bowl a restaurant and home-cooked favorite, especially on chilly, wintry days. The challenge with lightening is obtaining that luscious, creamy texture without any cream. Potatoes are a tricky starch. Cauliflower, however, has a smooth flavor and a skinnier, less starchy profile. When roasted, it develops a creamy interior (and nutty flavor) that becomes delightfully smooth when blended with reduced-fat milk; this is the light, earthy base for our chunky potato soup.
