Corn cakes Serves six as a generous starter or light lunch These manage to pull off the trick of being totally light but utterly creamy at the same time. Other cheeses also work instead of the feta: Gorgonzola, for example, if you want something a bit punchier. If you want to go for restaurant-style presentation on the other hand, use the corn husks (rather than baking parchment) to line the tins. They look lovely – like little bamboo baskets. Soupe de maïs épicée I love the combination of sweet, spicy and smoky. Each mouthful is a voyage of discovery: the sweet dominates first, then comes the smoke and finally the heat hits you. Chipotle, which are smoked dried jalapeños, give both the spice and the smokiness to this soup. They vary in heat, so assess how hot yours is before adding it. If you can't get chipotle, use fresh chilli and smoked paprika instead, to taste.

Chicken kebabs These chicken kebabs marinated in a tangy blend of yogurt, lemon, garlic and spices are a huge crowd-pleaser. One of my all-time favorite recipes for entertaining, these chicken kebabs are marinated in a tangy Middle Eastern blend of Greek yogurt, lemon, garlic and spices, then grilled on skewers until golden brown. They are delicious over a bed of golden Basmati Rice Pilaf with Dried Fruits and Almonds (as pictured above) or on top of a Greek salad. Boulettes de poulet au relish citron-harissa Serves four, making about 12 meatballs The relish will make more than needed but it is completely delicious and will last in the fridge for a couple of weeks at least. Serve it with roasted vegetables, grilled chicken or slow-cooked lamb. Commercial harissa varieties can vary. If yours isn't very spicy, add a bit of cayenne pepper to it to enhance the kick.

Tacos aux crevettes, au maïs et au bacon These street-style shrimp tacos with corn, bacon, and lime crema make a fast, fun, family-pleasing feast! The inspiration for these crazy-good shrimp tacos comes from a fabulous cookbook called Taqueria: New-Style Fun and Friendly Mexican Cooking by Australian chef Paul Wilson (Hardie Grant Books, 2017). Wilson writes, “This is one of the most popular summer dishes in my kitchens. It’s fast, simple to prepare, and the three main ingredients work very well together in a warm tortilla.” My family literally devours these. What You’ll Need To Make Shrimp Tacos with Corn and Bacon

Healthy burger au saumon The only reason I don’t make these Mediterranean healthy Salmon Burgers with yogurt & dill sauce more often is that salmon is an expensive fish. But when I saw a nice salmon fillet at the market the other day, I just couldn’t resist its appeal. It had a nice bright, pinkish-orange color and was resting casually on a pile of crushed ice. At that moment it seemed to me that it had a certain amount of cockiness, as if it knew it was one of the best stuff on the counter. I knew I had to make it mine! Chili blanc au poulet Made with a rotisserie chicken, this hearty white chicken chili is a one-pot meal that you can have on the table in under an hour. I have tried countless recipes for white chicken chili over the years, from this popular and easy “dump it all in a pot” recipe to more authentic, time-consuming versions made from a wide array of chili peppers and hominy. My favorite recipe, and the one my family loves best, falls somewhere in the middle.

Ranch dressing This buttermilk ranch dressing is cool, creamy, garlicky and delicious over a romaine salad or as a dip for crudités or chips. Gourmet is probably not the word that comes to mind when you think of ranch dressing, but homemade is nothing like the mass-produced bottled stuff on the grocery store shelves. This buttermilk version is my favorite — it’s cool, creamy, tangy, garlicky and, honestly, good enough to eat straight with a spoon.

Burger portobello Healthy Balsamic Portobello Mushroom Burger with Veggies and Swiss Cheese…! Pair it with some home style baked potato wedges, Deli…cious!! Do you love mushrooms? Well, I am seriously a Huuuge fan of it! Maïs grillé à la kényane Makes 1/4 cup seasoned salt for lots of corn goodness. Can you squeeze a lime? Can you smash chili peppers into a mini mound of salt? Can you grill corn? This is one of those recipes that you make on a day, much like today, when you want to prepare something impressive, but you can’t be bothered to do very much.

Galettes de saumon au sésame et curry rouge Switching things up with these Sesame Crusted Curried Salmon Burgers with Lemony Herbs. Pan seared salmon burgers seasoned with spicy red curry and coated in sesame seeds. Not only are these salmon burgers healthy and delicious, but they feel kind of fun and fancy too.

Maïs aux plantains Serves 4 Corn with plantains is a common pairing in West Africa. Add a little heat with your favorite hot pepper, or use regular bell peppers.
