Corn cakes Serves six as a generous starter or light lunch These manage to pull off the trick of being totally light but utterly creamy at the same time. Other cheeses also work instead of the feta: Gorgonzola, for example, if you want something a bit punchier.If you want to go for restaurant-style presentation on the other hand, use the corn husks (rather than baking parchment) to line the tins. Chipotle, which are smoked dried jalapeños, give both the spice and the smokiness to this soup. They vary in heat, so assess how hot yours is before adding it. If you can't get chipotle, use fresh chilli and smoked paprika instead, to taste.

Chicken kebabs These chicken kebabs marinated in a tangy blend of yogurt, lemon, garlic and spices are a huge crowd-pleaser. One of my all-time favorite recipes for entertaining, these chicken kebabs are marinated in a tangy Middle Eastern blend of Greek yogurt, lemon, garlic and spices, then grilled on skewers until golden brown. They are delicious over a bed of golden Basmati Rice Pilaf with Dried Fruits and Almonds (as pictured above) or on top of a Greek salad. Boulettes de poulet au relish citron-harissa Serves four, making about 12 meatballs The relish will make more than needed but it is completely delicious and will last in the fridge for a couple of weeks at least. Serve it with roasted vegetables, grilled chicken or slow-cooked lamb. Commercial harissa varieties can vary. If yours isn't very spicy, add a bit of cayenne pepper to it to enhance the kick.

Ranch dressing This buttermilk ranch dressing is cool, creamy, garlicky and delicious over a romaine salad or as a dip for crudités or chips. Gourmet is probably not the word that comes to mind when you think of ranch dressing, but homemade is nothing like the mass-produced bottled stuff on the grocery store shelves. This buttermilk version is my favorite — it’s cool, creamy, tangy, garlicky and, honestly, good enough to eat straight with a spoon.
