Cilantro Lime Hummus. Look what I found!

Cilantro Lime Hummus

A bunch of delicious, vibrant cilantro. And it didn’t cost me an arm and a leg. Since I had lots of limes left over from the lemon lime cake I made a few weeks ago, I knew the first step would be to combine the cilantro with lime. Cilantro reminds me of delicious Mexican food (my favorite cuisine!) , which in turn reminds me of margaritas. And because I have a dangerous hummus obsession, I knew some form of the bean dip was on the agenda.

Who am I? Luckily, I instantly remembered that I had some persian lime olive oil leftover from my shopping trip this summer. It had to be fate. The combination of the sweet mango with the tang of citrus, zing of jalapeno, and freshness of cilantro… They are meant for one another. I love to eat this salsa with tortilla chips, but it is also delicious atop grilled salmon or chicken. Or, with just a spoon! Next time you’re in the grocery store, snag a couple mangoes to make this delicious summery salsa for your friends and family! Begin by prepping the ingredients. Seed the tomatoes before dicing into 1/4-1/2″ chunks. It looks very much like pico de gallo at this point! For the mangoes, dice into 1/4-1/2″ chunks. Next, turn it inside out. Chop the cilantro. In a small bowl, combine the juice of a couple small limes, a lemon and a lime, whatever you have. Let sit, covered, at room temperature for about 30 minute to 1 hour for flavors to develop. Grilled Guacamole Recipe

Ummmm. Heck yes!! I made this recently for Tasty Kitchen and it was gooooood. You need to make it. Immediately. And… wanna hear something really exciting. Okay….here’s the step by step for Grilled Guacamole: You need to prepare either your indoor or outdoor grill. Once the avocados have some grill marks, throw a few slices of red onion on the grill to char. Next up, let’s grill some tomato quarters!

Once we’ve got everything grilled and set aside, place the avocado into a bowl and give it a quick mash. Next, grate some garlic over the avocado. Be sure to get all that fabulous garlic from the bottom side of your grater. Next, juice a lime or two over the avocado. Add the chopped red onion. And then the tomatoes! Throw in some chopped cilantro. Season the guac with some salt and a few turns of freshly cracked black pepper. And serve it up with some of your favorite chips!!
