I didn’t have any corn flour on hand to make the usual corn tortillas, nor did I have any canned tomatoes for the typical enchilada sauce. Gluten Free Guide & Gluten Free Restaurants | Celiac Scene. Victoria Gluten-Free Friendly Restaurants. Diagnosing Celiac Disease, Biopsy | University of Chicago Celiac Disease Center. Only a biopsy lets you know for sure If screening tests and/or symptoms suggest celiac disease, your doctor needs to establish the diagnosis by obtaining tiny pieces of tissue from the upper part of your small intestine to check for damage. This is done through a procedure called an endoscopic biopsy. Examining a biopsy sample of the small intestine is the only way to diagnose celiac disease.

What is a biopsy? A biopsy involves a long, thin tube with a small camera on the end. Let’s take a closer look at the steps involved in the biopsy. Step 1. The doctor inserts the tube into your mouth, down your throat, and into your esophagus—the long, hollow passageway that connects your throat to your stomach. Step 2. When the tube reaches your stomach, the doctor uses the camera to find the duodenum—the entryway into your small intestine—and inserts the tube there. Step 3. In your small intestine, your doctor examines the entire length of the duodenum, the area affected by celiac disease. Step 4. Soaking & Fermenting Grains for Fluffy and Nutritious Results! Chocolate Hummus - So Decadent That You Can Use It In Place of Chocolate Frosting. Chocolate hummus is so decadent – like a rich chocolate mousse – that unless you tell your tasters it’s hummus, they’ll never know. Case in point: While I slathered chocolate hummus all over pita (probably too much of it because it’s “healthy”), I also used it to frost chocolate cupcakes. Friends and family unknowingly tasted the chocolate hummus frosted cupcakes (they were only told that it was a chocolate cupcake), and not a single soul gave me a sidelong “what are you feeding me” glance.

I asked for feedback and I got comments like, “What do you want me to tell you? It’s just a really good chocolate cupcake with chocolate frosting.” Without knowing it, they gave me the exact feedback that I wanted to hear. This chocolate hummus recipe is my own creation. It gets third place for most boring sport to watch after golf and baseball. So seeing as I’m not a huge football fan, I obviously did not watch the Super Bowl yesterday.

But that doesn’t mean I missed out on the snacking! :) I didn’t get to enjoy the typical Super Bowl fare such as chips and salsa or pizza or whatever people usually eat while watching men in tight pants knock each other over, but what I had was much, MUCH better. I had (too many) spoonfuls of Snickerdoodle dessert hummus that I made earlier in the weekend. The combination of almond butter, maple syrup, and cinnamon is WONDERFUL, and you really can’t taste the chickpeas at all! Eating the Snickerdoodle dessert hummus straight out of the container with a spoon is my favorite way to eat this dip (it feels so indulgent!) Mayo Clinic Discovers Potential Link Between Celiac Disease And Cognitive Decline. Mayo Clinic researchers have uncovered a new link between celiac disease, a digestive condition triggered by consumption of gluten, and dementia or other forms of cognitive decline. The investigators' case series analysis -- an examination of medical histories of a group of patients with a common problem -- of 13 patients will be published in the October issue of Archives of Neurology. "There has been very little known about this connection between celiac disease and cognitive decline until now," says Keith Josephs, M.D., Mayo Clinic neurologist and study investigator. "This is the largest case series to date of patients demonstrating cognitive decline within two years of the onset of celiac disease symptom onset or worsening. " The next step in the research will be to investigate the measure and nature of the connection between the two conditions.
