Cinnamon Swirl Bread. The following recipe incorporates a couple of tips for successful cinnamon swirl bread that we've discovered over the years.

Cinnamon Swirl Bread

First, for a deep-dark, moist, cinnamon swirl inside the bread, blend together sugar, cinnamon, raisins or currants, and flour until smooth. The addition of raisins or currants adds moistness, as well as subtle flavor. And second, rather than brush the dough with butter before sprinkling on the filling, brush it with beaten egg. Butter acts as a barrier between the pieces of rolled-up dough, preventing them from cohering, and giving you bread that "unravels" when you cut it. On the other hand, the protein in egg acts like glue, cementing the bread and filling together, and allowing much less (though still a bit) unraveling.

I never thought I would make a healthy sandwich bread that tasted soooo goood! I mean healthy doesn't always taste so good, right? :) We love this bread...it is so much better than the Milton's Multigrain. Ok, maybe its because it is homemade and just as delicious! It has a hint of sweetness from the honey. When I looked at the recipe, I noticed that it used 1 whole cup of whole grain hot cereal. Now, I have come to LOVE baking bread and it was the perfect excuse to make a loaf. I loved the fact that the bread didn't taste dry or "wheaty" or crumble as is usually the case with 100% whole wheat. 1 cup 7 grain hot cereal (I used 10 grain) 2 cups boiling water 3 TBS unsalted butter, melted and cooled, plus extra for brushing 3 TBS honey.

Multigrain Seeded Sandwich Bread. Over the past few weeks, while school was beginning to wind down (aka wind up with TONS of exams and homework), I didn’t have much time to spend in the kitchen. Dinners consisted of mainly noodles with sauce from a jar, rice, or salads. All sweets pretty much came to a halt (except for pumpkin pie !) , and even bread was hard to come by. So I did something I haven’t done for months . I bought bread from the store. Don’t get me wrong. But, something good did come out of it (besides five or so PB&J sandwiches). And it is so good . Let rise in an oiled bowl for 60-90 minutes, or until doubled in size.
