Paleo Apple Crisp. I started playing with apple crisp recipes last fall, before I ever started the blog. It was actually the first dessert recipe I ever tried to adapt (and one of the successes that gave me the confidence to start blogging in the first place!). So, this one has seen a year’s worth of iterations to reach this awesome and delicious version. What better way to celebrate one year of blogging (my anniversary is next week) than with a recipe that has taken that full year to perfect! One thing you’ve probably figured out by now is that I take some pride in creating the best paleo adaptations of Western foods. Recipes like my chewy granola bars, perfect paleo pancakes, plantain crackers, graham crackers, perfect pumpkin pie, and chocolate chip “oatmeal” cookies represent some of my favorites.

Picking a good apple is key. I also think this is one time where chopping nuts by hand works better than using a food processor. What is muscovado sugar? Serves 6 generously. I really wish I did paleo desserts often on the blog because, let’s face it, I’d be far more popular. But alas, sticking to what I know is what I tend to do. This is so easy it should be illegal, and it’s perfect for making in tiny batches when you want just a bit of a sweet treat. This reminds me of summers as a kid when my family would walk to the neighborhood soft-serve place…we’d get big cones and always get chocolate “dip”–the crunchy shell that you’d have to race to eat or else the ice cream would come melting out from all sides.
