We came up with this recipe when we opened Beecher's. We wanted to show our customers that you can cook with and eat great cheese every day, and this killer mac and cheese uses two of our cheeses with a background hint of garlic powder and chipotle pepper. We've already won the vote for Seattle's best Mac and Cheese, but the tens of thousands of people a year from all over the world who eat it in our store tell us it's the world's Best. serves 4 as a side dish

October 2, 2010 My mom is obsessed with keeping a stocked freezer, but I guess I don’t really take after her, because my freezer tends to be relatively empty, aside from random containers of stock/ramen broth, frozen dumplings and pierogi. I admit, I store buy frozen chinese dumplings and pierogi for those times that I just don’t feel like cooking. I tell myself it’s because of ease and convenience, but really, I just love the taste of frozen pockets filled with deliciousness. Pierogi are fast, tasty, and ideal for when I let myself get too hungry and become a crazy unthinking monster.

The cold weather months really put me in the mood for grilled cheese sandwiches and soups. And although Elsie and I are huge fans of a classic and simple grilled cheese sandwich, we thought it would be fun to come up with some variations for a family lunch we hosted over the weekend. Elsie also brought her panini maker over to my house, it was my first time using one and I've got to say- I'm now a huge fan! I pick up sticks when I’m on walks with my husband just to wave them in the air at him and say “Expelliarmus!” When we visited The Wizarding World of Harry Potter last October, I literally went running through the park like some sort of crazed madwoman just to get to the ride “Harry Potter and the Forbidden Journey.” If there was an Olympic record for sprinting toward a theme park ride, I would be polishing the gold right now.

Oh my gosh you guys. I cannot even begin to tell you how IN LOVE I am with these AMAZING pretzels!! Oh.When Intelligentsia Coffee opened in Pasadena recently, I was intrigued the lasagna cupcakes they served. The cupcakes are made by Heirloom LA , a catering business. About the size of a muffin, a single lasagna cupcake was a delicious meal. After seeing how much my daughter enjoyed them (she ate my entire cupcake and I had to order a second one), I decided I had to try making them at home. After a bit of research, here is my method. The girls love them and take them to school as lunch.
