Best Chicken Parmesan Recipe. I have a love-hate relationship with Chicken Parm. It sounds great in theory: I love chicken, I love Parmesan, I love tomato sauce and I love spaghetti. So I should love Chicken Parmesan too, right? But for all its promise, in most restaurants, it’s an utter abomination that ruins the ingredients that go into the dish. With soggy pancakes of mystery meat saturated with old grease and insipid sauce, I’ve never been able to get behind the American interpretation of Pollo Alla Parmigiana. Part of the problem is that most chicken parm recipes have you douse the crisp fried chicken with sauce before covering it with cheese and then baking it. Maybe it’s just me, but it it seems a little silly to fry something to get it crisp only to cover it with liquid and make it soggy. That’s why I decided to stick the sauce under the chicken. As for the sauce, I find most places spend more time on the chicken than on the sauce (which isn’t saying much) and the sauce tends to be watery, bland and sour.

Cashew Chicken Stir Fry. I made this Cashew Chicken Stir Fry recipe a few years ago for my hubby’s birthday–he loves a good Stir Fry. I was actually pregnant and quite nauseous, but I wanted to make a special meal for his special day. I remember making it and loving it, but I didn’t make it for a long time after. The memory just didn’t sit well. I had it in my recipe binder, and have made it from time to time, and when I pulled it out the other day, the flavors left me thinking, “why on earth don’t I make this more often?”

The sauce with ginger is what makes it yummy, and love the texture of water chestnuts with the cashews. Super quick and simple, and a crowd pleas-er with the whole family! Cumin Grilled Chicken Breasts Recipe : Ellie Krieger. Lemon Cilantro Chicken Recipe. Quick Dinner: Glazed Chicken {recipe} I've been meaning to post this chicken recipe for a couple of weeks now... but, as everyone knows this time of year is hectic and sometimes the blog has to take a backseat to other things. I had put together a meal plan for the week and this was a recipe I had wanted to make because it had some amazing spices in the rub and the maple glaze sounded pretty good... a nice contrast that should please everyone.

The rub has a combination of paprika, salt, cumin, black pepper and cinnamon. I thought this was a great starting point for our dinner. I love when a variety of spices come together to make something delicious... it kind of justifies my trips to Penzey's! The only problem with the original recipe was that the maple glaze didn't come together for me. This is one of those dishes that once you've made it a couple of times, you'll be throwing it together without even thinking about it. I'd love to hear what you make on those crazy days to feed your family (or yourself!). Glazed Chicken. Slow Cooker Pulled Chicken Recipe. Pulled chicken in the slow cooker goes great on sandwiches or sliders.

If you are looking for an easy slow cooker meal for football season, this recipe for pulled chicken is perfect for you. This recipe combines homemade BBQ sauce and boneless skinless chicken breasts in the slow cooker. Enjoy. Greek-Style Roasted Chicken and Potatoes Recipe. Preheat the oven to 375 degrees. Scrub the potatoes well, dry, and remove any bad spots. Cut into equal sized large dice cuts. In a large roast pan, put in about 2 tablespoons olive oil, the diced potatoes, about 1 teaspoon salt, and about 1 tablespoon lemon juice. Mix well and make a spot in the middle to place the chicken. Make sure that gizzards are removed from the cavity of the chicken, if there are any. Truss (compact the chicken to protect the breast from overcooking) by tucking the wings up and behind, and cutting small slits in the skin on the backside of the cavity and placing the end of the opposite leg through that slit. Place in the oven.

Chicken Sandwiches

Chicken Schnitzel. Cemita Milanesa de Pollo Cemita Milanesa de Pollo is the sandwich sold—by almost every vendor—at the Mercado in Puebla for breakfast, lunch, dinner and late night snacks. Needless to say, the competition over who makes the best is fierce. A generous portion of crispy fried chicken hangs over a sesame seed bun, which also cradles a generous amount of shredded Oaxacan cheese, avocado, and escabeche de verdura, pickled vegetables that take on a spicy, smoky heat from chiles in adobo. In Puebla, the sandwich is made with palapo, an herb indigenous to the area. Chicken Breasts. Sesame Chicken Recipe.

Credit: Milisa Armstrong Sesame chicken is not really authentic Chinese food, but it is a classic dish served in Chinese restaurants throughout the United States. Lacking the Chinese takeout that so many folks take for granted out on the ranch, I learned to make this favorite takeout dish at home. Chicken Souvlaki with Tzatziki Sauce and Greek Salad. [Photograph: Yvonne Ruperti] Notes: Don't skip the cucumber salting step and use Greek yogurt for a thick and creamy tzatziki sauce. If Greek yogurt is unavailable, let regular yogurt drain in a fine mesh strainer lined with cheesecloth set over a bowl or the sink until thick and creamy, about 1 hour. Once you've marinated the chicken, discard the marinade. Whether using an outdoor grill or grill pan, brush the grates or pan lightly with vegetable oil before cooking chicken.
