I’ve edited the recipe just a bit to enhance with a bit of salt and flesh out some of the details. Enjoy! I could sum up this post by the following statement from my husband while devouring this meal: “This is the ultimate perfect dinner.” Of course it could have been atmosphere since it had snowed all day and was the perfect night for soup, but still, when we were fighting over the last scoops in the pot, I knew this had to be a winner. I received this recipe from a commenter, Liz, who has tried several recipes from here.

Note: To make my life easier, while the soup is coming together, I put the chopped broccoli in a large glass bowl, cover with saran wrap and microwave for about 3-4 minutes. Hope they don’t mind. Somehow I doubt it; it’s only recipe plagiarism when you make someone else’s recipes and don’t reveal the source, isn’t it? I’m a sucker for their magazine, though I must admit I don’t cook a lot of their recipes. They’re too fancy for me and for everyday cooking. I mainly drool over the gorgeous photography. But that somewhat changed. Ingredients: 8 oz sourdough bread (or any other dense, dark bread) 3 large sweet onions 3 large garlic cloves (or 5 medium ones) 2 1/2 cups chicken broth 1 tsp dried thyme 1 cup milk 3 oz butter Directions: Cube the bread.

Peel the onions. Grate the garlic. I’m using chicken bouillon cubes for this, but I’m sure vegetable cubes will work fine as well. Heat half the butter in a skillet, toss the bread cubes in there and cook until crispy and brown. At the same time heat the remaining butter in a different pan and cook the onions, garlic and a tsp fresh or dried thyme for 20 to 30 minutes. French Onion Soup and Pretty Nails! French Onion Soup and Pretty Nails!

Actually I think it's more of the fact that the weather can't make up its mind about what season it wants to be. A week ago it was a perfect 67 degrees and sunny, 88 and sticky a few days later, then a trip to Wisconsin over the weekend brought a 36 degree overnight low. My sinuses have given up trying to adjust and are now revolting. I have a mutiny going on in my face, and it's not even winter yet. Feeling like this makes it hard to get motivated to cook anything for dinner, I had trouble bringing myself to make a sandwich last night.

This corn and potato chowder is a perfect soup for a sicky like me. In my opinion, it would have been very much worth it had the corn been better quality, unfortunately, it wasn't the greatest. Corn and Potato Chowder recipe adapted from Foy Update Prepare the corn first. Add the garlic and saute for 1-2 minutes.
