But for some reason I don’t think too many people will mind. I think a cupcake is one of those things that most people love (even though I know of a few people who don’t). For me, a cupcake (a good one) is just perfection. I normally struggle to finish a big slice of cake but a cupcake? Never! The Peanut butter-Chip cupcakes are my husband’s absolute favourite and I just love watching his face when he eats one. Makes 12 200g Cake flour 150g Castor sugar 125g Butter, Room Temperature 50g peanut butter 125ml Milk 2 Large eggs 2.5ml Salt 10ml Baking Powder 1 cup dark chocolate chipsPeanut butter frosting 50g peanut butter 50g unsalted butter 400g icing sugar, sifted 1 tsp vanilla extract 20ml milk Preheat the oven to 180° and place cupcake papers in a muffin tin. Combine all the ingredients (except the chocolate chips) in a large bowl and beat until the batter is smooth.

The recipe, from Martha Stewart's cupcake book, suggests pairing with her Seven-Minute Frosting, however I paired with a Vanilla Bean Buttercream. Chocolate chip cookie dough cupcakes. Makes 12 For the cookie dough:1 1/8 cups all purpose flour1/2 teaspoon salt1/4 teaspoon baking soda1/2 cup (1 stick) butter or margarine, softened3/8 cup granulated sugar3/8 cup packed brown sugar1/2 teaspoon vanilla3 tablespoons soy milk or milk*3/4 cup mini semi-sweet chocolate chip (See note below) Beat the butter, sugars, and vanilla with electric mixer until creamy.
Add the soy milk and beat well. Add in the salt, baking soda, and flour and slowly mix until combined. Stir in chocolate chips. Form teaspoon-sized balls (approx. 1″ across). *i'd strongly suggest using mini chocolate chips, or finely chopped regular chocolate chips. Whisk together soy milk, coconut milk, sugars, oil, and vanilla. Gluten Free Snickerdoodle Cupcakes. I was having a conversation with my g-kid Julian about his following a gluten-free, dairy-free diet and he said to me “I just don’t want to have to worry about what I eat!”
Of course he doesn’t, he’s 10! I know lots of grown ups who don’t want to worry about what they eat either. I believe the best way to get kids to embrace their diet, regardless of the intolerance, is to make them a part of the process of creating their food; everything from thinking up menus to shopping to cooking. The best part is enjoying the fruits of their labor. The other day the g-kids and I planned a whole menu for my son’s birthday, everything was gluten and dairy free and it was abundant; we had London Broil, grilled tilapia, dairy-free mashed potatoes, gluten-free pasta salad, a mixed salad filled with all sorts of fresh veggies and of course a gluten-free birthday cake. A couple days later we actually worked on developing our own recipe together. I would say that is two thumbs up! Ingredients Topping.
