So, today I’m sharing my favorite coconut cake recipe with you. Luckily this one didn’t take as many attempts as the chocolate cake to get it just where I wanted. This coconut cake is elegant and sophisticated yet very traditional and simplistic. It’s like the cake you remember your grandmother serving at family parties growing up. I hope you all had wonderful holidays. This cake is for serious coconut lovers, since it has a pronounced coconut flavor. It will also please everyone who is fond of buttery crunchy streusel topping – there’s plenty of yummy crumbs piled over the top. Fragrant and sweet pineapple vanilla jam not just tastes great, but also keeps the cake moist for days. In other words, the cake is worthy of baking. Makes one 8-inch or 9-inch cake, about 12 to 16 servings For the pineapple vanilla bean jam: use this recipe, the whole amount For the coconut streusel topping: ½ cup all-purpose flour¼ cup granulated sugar1/8 tsp salt½ stick (4 tbsp) unsalted butter, cold, cut into 1/2-inch cubes1/3 cup finely shredded unsweetened lightly toasted dry coconut For the cake batter: Make the streusel topping: In a medium bowl, combine the flour, sugar, and salt.

This was an odd impluse, because I have never, ever cooked or even eaten rhubarb in anything other than a jam. Incidentally, I am currently in possession of an amazing Raspberry-Rhubarb preserves from Mt Valley Orchard. Not only is this variety amazing, but they make 80 or so other varieties of preserves (some with no sugar added) which they sell at SF Bay Area farmer’s markets. They don’t have a website, but you can e-mail them for a list of all their products, which they will ship. I’m not sure if I’ve ever had preserves or jams that are as good. But I digress. I chopped up some rhubarb and tasted a piece. The final result is a sweet, white, moist loaf cake that has lots of candied ginger and rhubarb sprinkled throughout.

Rhubarb and Ginger Loaf Cake 2 cups all purpose flour 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 cup white sugar 2 tbsp melted butter (or oil) Hazelnut brown butter cake. Last month, someone emailed me to ask how I’d suggest she adapt the Icebox Cake to feed 30 to 40 people.

Anyone who has ever emailed me to ask me a question before probably knows what happened next: I answered at least 10 (cough 20) days after the fact. Nevertheless, she assured me that she’d scaled it just fine and her husband and hers joint birthday part was wonderful, or at least I think this is what she said because I do not remember a single word that passed between us after she uttered what have to be the four most beautiful words in the dessert lexicon: Hazelnut.
