We aren’t quite there yet, but it is still time to lighten up our party menus with bright, fresh flavors and cakes. You know, the types of dishes and treats perfect for an upcoming bridal brunch or Mother’s Day tea – less decadent than the ones we crave come fall or deep into winter. Today’s cake makes for the perfect transition from winter to spring with its light sponge cake, sweetened berry filling, and whipped frosting: a Matcha Strawberry Cake! Some of you might be thinking “what the heck is ‘matcha’?” The base of this creation is a genoise cake.

San Francisco has a lot to offer, but all the horror stories that you hear about the high rents, the tech bros, and the homelessness issues are also true. It's incredibly easy to get caught in the grit and the grime of the city, allowing it to overshadow everything else. Is that too negative? I've been accused many times of always finding something wrong and needing an attitude adjustment. Because despite all the flowers and delicate things you see on this blog, I'm naturally short tempered and hot headed in real life.

And since I've never been that into yoga, one of the things that I do to chill out and calm the f*ck down is to bake a cake. Which is why I've been spending a lot of time flipping through my blog friend Tessa's cookbook, Layered: Baking, Building, and Styling Spectacular Cakes. This might be my favourite cake to date. i was beyond excited with how it turned out. literally jumped for joy haha. not only with the flavour combinations of the earl grey tea + honey, but that grey ombre frosting too. i think i am starting to fall in love with grey frosted cakes. the piped topping looks difficult to create, but it was easy peasy. i used all the left over frosting colours, two piping tips (one small star & one large star) & went piping crazy! You can make any design you like on the top & it will automatically look perfect. for this cake i used a special type of earl grey tea from stash tea. it contains double bergamot, so it has an extra strong flavour which comes through once the cakes are baked. i wonder what else i can infuse this earl grey into, i absolutely LOVE it!

Last year my friend from japan came to visit & brought with her a ton of matcha flavoured treats for us to try. matcha is a specially blended green tea powder from japan that is incorporated into various foods, drinks & desserts. while some of the treats i tried were a bit too strong for my liking, the thing i loved most was the green tea kit kat bar. they have SO many unqiue flavours of kit kat available, omg. the combination of the sweet white chocolate & earthy matcha made for the most perfect pairing. well i have yet to come across it again, today's cake is inspired by that green tea kit kat!

A matcha layer cake frosted with a creamy white chocolate buttercream. i was so tempted to add a little green tea powder to the frosting & make it an ombre cake.. maybe next time! I used aiya matcha's cooking grade blend which is specially blended for cooking & baking because it's aromas will come through even when the matcha is mixed with various ingredients! Ingredients. I think three years are worth celebrating, don't you? This cake went through a couple iterations before it reached this final product, but friends and family have all agreed that it is incredible.
