Gluten and Allergen Free School Lunch and Snack Ideas (Plus, Information on 504 Plans and Downloadable Teacher Letters) As a mom to two children with multiple dietary restrictions, I can think of few things more mind numbing than coming up with creative and healthy boxed lunches (that my kids will eat) 5 days a week, so I thought I would begin a list of links to recipes that I make for my kids’ lunchboxes as well as several links to some great resources that just might make this daily activity a little less stress-inducing for all of us. But first, here are a few tips that have been REALLY helpful for me: Plan Ahead! Planning ahead definitely makes lunchbox preparation significantly easier.

Caveman Food: Grain Free Almond Crackers. Sometimes you just want something crunchy, or you want something to spread your favorite dip on rather than just eat it with a spoon.

Caveman Food: Grain Free Almond Crackers

This is one of the banes of low carb/paleo existence. Luckily, it's dead easy to whip up some almond crackers to satisfy on both counts! You can enjoy them as is or use them as vehicles for other tasty food such as guacamole or pate. You could even make them into dessert by adding some cinnamon or pie spice to the dough and perhaps a touch of honey or maple syrup. ingredients:1 cup almond flour1 egg white1 pinch salt. Homemade BBQ Sauce (corn-free) Growing up, I loved the summer time, and not for the reason you may be thinking (no school!). I loved the hot and humid Ohio summer months for the beautiful green grass and booming maple trees that would turn a fiery red come October. I loved going down to the local farm where we could pick okra and gather a bounty of fresh picked strawberries, tomatoes, cucumbers, green beans, and corn on the cob.

I remember sitting in my parents’ garage, with the door up, watching as the afternoon thunderstorms rolled in, bringing a much appreciated warm breeze to cool my sticky skin…sipping an ice cold while shucking bushels of corn, either to eat fresh on the cob or cream it so my mom could freeze it for the upcoming year. Bittersweet Chocolate Zucchini Bread. If you were thinking of giving me a gift (aw, shucks), keep your zucchini to yourself, brother.

Stay at Home Mum - Survive and thrive on one wage! The best way to smuggle… beetroot « Vegie Smugglers. So, since we can’t have the beetroot brownie too regularly for dinner, I guess I’ll move onto recommending this delightful pink meatloaf as a way of getting beetroot into your kiddies.

The best way to smuggle… beetroot « Vegie Smugglers

Using fresh grated beetroot gives it a definite pink tinge, which is perfect for little girls with a meat aversion (like Miss Fruitarian). A 225g can of beetroot can be substituted, but boring brown will prevail. Apparently (so you’ve told me on Facebook), meatloaf is a bit popular. It IS a perfect easy-cook, that can sit in the fridge all week and be easily reheated or put on toasties or spuds. And an egg-free meatloaf recipe was requested, which is why you’re getting this sneak peak recipe from the first draft of the second Vegie Smugglers cookbook. Which means you can try it out and email me any feedback on the recipe – I’m currently up to my third round of recipe testing. UPDATE: Thanks guys – I have a lovely full quota of volunteers… no more needed at the moment.

I have a question for my gluten-free vegan readers – do you really want vegan food that tastes “meaty”?

Honestly, I am curious because I often hear vegan and vegetarian food described as having a “meaty substance” and yet these are dishes for people who have decided, for one reason or another, to eliminate meat from their diet. I suppose the point is that by adding ingredients to a vegan or vegetarian dish that are “meaty” it makes it more palatable to people who think that meat is essential to a meal.

(Like my husband) But is “meaty” really the right adjective? Maybe not – I think the correct word is “umami”. As we head into Fall I love the idea of one-pot meals that are filling and wholesome and somewhat traditional but with a twist. This dish is meat-free, packed with fiber from the red beans, filled with nutrients from the kale and has a savoriness, or “umami” if you will, not necessarily associated with a meatless meal.
