TGIF right phew this has been one of those weeks that just feels like it is never going to end. we had some really long days but all worth it in the end. especially when we made some chocolate donuts to start the weekend with! We loved all our facebook love on the preview picture we showed last night. some of you mentioned blueberry lavender, which is a combo we will have to try next!

For some time now we have been discussing that we wanted to re-make our chocolate donuts from a while back. we finally got around to doing it. better late then never right? Chocolate and mint is by far our all time favorite combo. but we are also fans of chocolate with fruit especially berries. though, we are find that chocolate goes with just about anything! Either way we are baked donuts fans for life speaking of, we need to get a new donut pan as one of ours is getting worn out. haha inspired by our chocolate mint donuts (which are vegan!)

Here is the breakfast cookie how-to I’ve been promising: In a small bowl, add 1/3 cup oats, 1 tbs nut butter of choice (I used raw almond) and 1/2 scoop protein powder (tonight was chocolate Designer Whey) Stir to combine and use the spoon to break up the nut butter until you have a nice crumbly mixture.

Add 1/8-1/4 cup milk of your choice (For me, unsweetened vanilla almond milk) and mix until fully moistened Next, add in 1/2 mashed banana and stir well Now the fun part- pick the mix-ins! Stir in your mix-ins of choice and season (I used a little Stevia and cinnamon) Plop the mixture onto an appetizer-sized plate and with the back of your spoon, flatten it into a round shape with equal thickness throughout Put the cookie in the fridge overnight. This morning, after a BEAUTIFUL yoga class (on the mat next to Ashley!) , I came home and put on my baking pants. It’s been a while since I’ve created a recipe for ya’ll, and I had pumpkin on the mind after this morning’s post. I went into the kitchen and after fumbling around for a while –I still have no idea where some of my aunt’s supplies are, haha- I did my thang. Vegan Gluten-free Chocolate Chip Pumpkin Bread Makes 1 loaf Ingredients: -2 C flour of choice (I used Bob’s Gluten-free Baking Mix, but spelt or whole wheat would be lovely)-2 t baking powder-1/4 t sea salt-2 t cinnamon-1/2 t nutmeg-1 bar dark chocolate (I used the kind with cacao nibs in there, too), chopped- your call on this one. Bake in a loaf pan for 30 minutes, then remove, cover with foil and bake an additional 15 minutes. Some of ya’ll have asked about how I come up with recipes.

Cinnamon Roll Baked Oatmeal. Cinnamon roll baked oatmeal. Frosted with my favorite Healthy Cream Cheese Frosting. I blame Ikea. It is impossible to walk out of that store not craving cinnamon rolls. The aroma of their freshly-baked rolls permeates the entire warehouse. I swear, it’s like they’ve sprayed cinnamon-scented perfume throughout the store.
