The Boy Who Bakes / Edd Kimber. I’m feeling rather nostalgic this week, most likely because today sees the start of series three of The Great British Bake Off on BBC2.

It feels like only yesterday when I was sat at home, nervously awaiting the first ever episode, but in fact it has been two years. Those months and years since winning the show have been an amazing roller coaster for me, I moved cities, met my boyfriend and most importantly (for this websites purposes at least) have made baking my career. By the time the series comes to an end I will have published two cookbooks and I will have started a baking business in London, to say I feel lucky is an understatement. Every day I am thankful that I get to live my dream and make a living following my passion.

Its definitely been a busy few years and sometimes I find my mind wandering back to just before I started filming the show, when I visited Paris on a mission to try as many French pastries as possible. No Minho, sinto-me em casa. E um dia gostava de lá viver. Numa quinta pequenina e rústica, com jardim e horta e uma cozinha enorme com uma grande janela em frente ao balcão, onde passaria largas horas a fazer bolos, biscoitos e pão e a experimentar receitas novas com os legumes acabados de apanhar. Provavelmente esse dia nunca há-de chegar, mas o Minho é uma terra generosa, e por isso dá-me muito, mesmo não vivendo lá.

Gosto de tudo no Minho: das pessoas de sorriso aberto e com uma certa vaidade na sua origem; das feiras e romarias (viva a feira de Barcelos! Esta paixão vem de família. Com o tempo, o Minho foi entrando na minha vida de outras formas: temporadas regulares em Caldelas, com as primas, a fazer companhia à nossa avó, que lá fazia tratamentos termais, universidade e primeiro emprego em Braga, colegas de trabalho, amigos, cunhada... The rich buttercream frosting makes it perfect! We’re a family that loves to double down on chocolate. Peanut butter is a favorite, too, and my No Bake Cookies combine both with oatmeal. But since there was a birthday, I felt like I really needed cake. Deep, dark, chocolate cake. For birthdays, we have to do it up right by making my version of cake bliss. My family enjoys watching me flit from one thing to another like I’m their own personal reality show for entertainment. They love to point out when my missing spatula can be found at the computer desk, or my phone in the pantry, and helpfully letting me know that the oven timer has dinged at least 15 times. I also like to do things in excess – you know a little mound of frosting will never do in this household. I need to swirl on a pile of it on top, and then top it off with ganache just for the fun of it. Yield: 8 servings Prep Time: 25 minutes Notes: Recipes.
