Grilled Cheese Academy. Spinach Pesto Grilled Cheese Sandwich. Earlier on in the week, when I made the spinach, or spanakopita pesto pasta I made sure to keep some of the pesto left over for something new.

I had come across the idea of using a pesto in a grilled cheese sandwich and it was the perfect time to try one. I have been experimenting with grilled cheese sandwiches for a while now. It all started when I first tried adding some jam to one then I moved on to chutneys and now it was time to try a pesto grilled cheese sandwich. Since the spinach pesto had some Greek flavours going on I decided to use a Greek cheese, graviera, in the sandwich. The spinach pesto sandwich with graviera was amazing! Well, my food-flashbacks are similar in a way. So this is my food fantasy of the day… and by the way – this sandwich is ridiculously good!!! Thora {*style:<b>THE RECIPE: </b>*} 21 oz / 600 gr cut off a rib eye (or as 3 steaks) Salt and pepper 2 tbs vegetable oil Season the pieces of meat with salt and pepper, rubbing in the seasoning a bit. 1 avocado ½ cup green olives 2 tbs chopped chives ½ a red chili pepper Cut the avocado in half, remove the seed and then spoon out the meat taking care no to break it. 1 baguette bread ½ cup / 120 ml sun-dried tomatoes. A perfect way to use up leftover chicken. Avocado is a wonderful healthy option in place of mayonnaise and it adds such great flavor. Yesterday I mentioned how good tasting bread is crucial for me in the sandwich making process, and Ciabatta is another fat free option I love to use. Although it's usually fat free, always double check the labels. I made this an opened open-faced for the photo, then realized once I started eating it that it's easier to eat if it's closed and it's also more portable for lunch on the run.

Perfect for lunch on the go, pack along some veggies and fruit on the side and you have yourself a meal. When I make a sandwich, I like using good crusty bread like a baguette or French bread, which is a perfect fat free bread option. A trick I like to do when I make a sandwich is to scoop out some of the inside of the bread, which allows me to make a larger sandwich, and it leaves room for the meat and lettuce. I personally enjoyed most of my sandwiches dry but if you prefer adding mayo or dressing, you'll have to adjust the points. I bet horseradish mayo would be lovely on this!
