But, it’s hard to stop once you start… s’up in da hood s’up! I have a problem… Anyways, guess what! You forgot to take your crazy pills this morning? You ate a whole pie over the weekend? You have officially gone off your rocker? Oh you guys!! And by no I mean yes. Which reminds me: last November I realized my husband is a coleslaw FREAK. Jackpot. Then last night as I was making this coleslaw to go along with this gorgeous chicken, my husband had the audacity to ask “is that the good coleslaw?” So, we enjoyed this easy and hassle free dinner and totally cleared our plates. I am not ashamed.

Here’s how I made it: {PS- I know I talked all about the coleslaw, but the chicken is really good too! Lets start out with some chicken thighs. Now comes the fun part. Marinate some chicken breasts in honey, mustard, and lemon, then top with bacon, mushrooms and cheese… How could that go wrong? I love to serve this dish with a side of oven fries and a crisp lettuce salad. It’s a meal full of flavor! Begin by making the marinade for the chicken. Start with equal parts Dijon mustard and honey. Here’s what you’ll need for the toppings: sliced fresh mushrooms, mostly cooked bacon (it will cook more when baked in the oven), grated cheddar, and fresh parsley. After the chicken has marinated, heat a small amount of oil in a large skillet. Scrape out the pan, and toss in the mushrooms. Assemble the chicken in a large baking dish. Mix in a Gallon Size Ziploc or Large Bowl: 1/2 tsp. 1 T Season All 3/4 tsp Pepper 1 c. 2 tsp. Preheat oven to 400 degrees. Spread melted butter around the bottom of the pan. Place each piece of chicken in the pan. Cook for 20 min. Crispy Cheddar Chicken.
