There will be so many other classics on the sideboard that if a new recipe isn't a hit, it just won't make an appearance next year. But if it's a success? Then we've got a new holiday tradition. I really can't lose. I thought I'd start with a classic dish that appears on many American holiday tables, but has never showed up on mine: I took the idea of a traditional broccoli casserole and gave it a little update. How about you? Broccoli and Cauliflower Gratin Serves 8 2 pounds broccoli2 pounds cauliflower (about 1 large head)4 tablespoons unsalted butter, divided1 small sweet onion, diced 2 cloves garlic, minced1/4 cup all-purpose flour 2 cups whole milk, scalded1 cup grated Gruyère cheese 1 /2 teaspoon mustard powder1/2 cup panko 1/4 cup grated Parmigiano-Reggiano cheese1 tablespoon olive oil Kosher salt and freshly ground pepper, to taste Preheat oven to 350°

I’ve edited the recipe just a bit to enhance with a bit of salt and flesh out some of the details. Enjoy! I could sum up this post by the following statement from my husband while devouring this meal: “This is the ultimate perfect dinner.” Of course it could have been atmosphere since it had snowed all day and was the perfect night for soup, but still, when we were fighting over the last scoops in the pot, I knew this had to be a winner. They sounded & looked wonderful to me so the head of yellow cauliflower in our fridge was quickly marked for pancakes. When I mentioned them in my weekly menu Dawn at Vanilla Sugar said she hoped there would be cheese in them. Well that was like a light bulb going on over my head. Of course there would be cheese in them! Cheese & cayenne! These were such a simple side dish & a great use for cauliflower (it seems we always end up roasting it).

I liked them with a little sour cream to dip them in while Matt preferred them with a little more cheese grated over the top. Cheesy Cauliflower Pancakes 1 head cauliflower2 large eggs1/2 c cheddar cheese, grated1/2 c panko1/2 t cayenne pepper (more of less to taste)saltolive oil Cut cauliflower into florets & cook in boiling water until tender about 10 minutes.
