Modernist Cuisine: The Art and Science of Cooking: Amazon.co.uk: Nathan Myhrvold, Chris Young. The Flavour Thesaurus: Amazon.co.uk: Niki Segnit. This book has had stunning reviews in the national newspapers, and I decided to buy it as a present for my husband, the chef in our household.

On the tube home, I had a quick flick through it out of curiosity...and I haven't been able to part with it since. The concept of `The Flavour Thesaurus' is utterly, utterly genius. Visual Aid: Stuff You've Forgotten, Things You Never Thought You Knew and Lessons You Didn't Quite Get Around to Learning: Amazon.co.uk: Draught Associates, Duncan McCorquodale.

Information is Beautiful: Amazon.co.uk: David McCandless. The Big Fat Duck Cookbook: Amazon.co.uk: Heston Blumenthal. In this enormous, beautiful book, we hear the full story of the meteoric rise of Heston Blumenthal and The Fat Duck, birthplace of snail porridge and bacon-and-egg ice cream, and encounter the passion, perfection and weird science behind the man and the restaurant. Heston Blumenthal is widely acknowledged to be a genius, and The Fat Duck has twice been voted the Best Restaurant in the World by a peer group of top chefs. But he is entirely self-taught, and the story of his restaurant has broken every rule in the book. His success has been borne out of his pure obsession, endless invention and a childish curiosity into how things work - whether it's how smell affects taste, what different flavours mean to us on a biological level, or how temperature is distributed in the centre of a souffle.

Heston Blumenthal at Home: Amazon.co.uk: Heston Blumenthal. As Heston does tend to put a more complex spin on the art of cooking, I was worried that this would be a book deigned to adorn the coffee table but have to admit to being pleasantly surprised, and.....find that we share a 'secret vice' or two!

* From 'Prawn Cocktail' on page 125: 'Confession time: prawn cocktail is my secret vice.' Given Heston's reputation for 'tweaking' in the technical sense, I was relieved to read further on in the same paragraph: '....Being such a prawn cocktail addict, I'm deeply resistant to attempts to muck around with the ingredients....' Measuring in around 27.5 cm x 22 cm x 3 cm....it is far from lightweight with Heston and a heap of ingredients on the front cover! What Einstein Told His Cook: Kitchen Science Explained: Amazon.co.uk: Robert L Wolke. This is a most delightful book, full of kitchen wisdom and chemistry, good and bad puns, and many, many clever witticisms.

What Einstein Told His Cook: Kitchen Science Explained: Amazon.co.uk: Robert L Wolke

It is a flat out pleasure to read, but what really makes it such an outstanding piece of work, and a book every kitchen should have, is that it is so full of information, from why and how corn syrup ends up in sodas to why and how to wash your mushrooms--and yes, they are indeed grown in manure, but not to worry, as Wolke explains on pages 286-288 in a little essay entitled, "You Can't Wash Your Car with a Wet Mushroom. " (I believe that.) This is the kind of book you'll find yourself reading from cover to cover instead of peeling the potatoes. Speaking of which, Wolke advises that there is a very slight problem with green potatoes, but that reports of their poisonous nature are greatly exaggerated.

(See pages 117-120 for the true scoop.) I have just one problem: nowhere does Wolke say how many sesame seeds are in a teaspoon. The C Programming Language. The C Programming Language, Second Edition by Brian W.

7 Must-Read Books on Time

Time is the most fundamental common denominator between our existence and that of everything else, it’s the yardstick by which we measure nearly every aspect of our lives, directly or indirectly, yet its nature remains one of the greatest mysteries of science. Last year, we devoured BBC’s excellent What Is Time? And today we turn to seven essential books that explore the grand question on a deeper, more multidimensional level, spanning everything from quantum physics to philosophy to art. It comes as no surprise to start with A Brief History of Time — legendary theoretical physicist and cosmologist Stephen Hawking’s 1988 masterpiece, which is commonly considered the most important book in popular science ever published and one of our 10 essential primers on (almost) everything.
