First of all, to type people, you have to be very familiar with cognitive functions and how they manifest in real life.
I look for the display of extraverted functions (Te, Ne, Fe, Se). These are the easiest to detect, and even introverts with a dominant introverted function would display their auxiliary extraverted function more readily (e.g. INTP has dominant Ti, but would mostly display Ne/Fe when interacting with other people). Then, I’d try to determine whether someone is an extravert or an introvert. This is more complicated than you think and you cannot go by the stereotype that extraverts are outgoing and introverts are quiet. Determine whether they’re a J or a P. As you get to know the person more, you’ll start to see their introverted functions (Ti, Fi, Ni, Si) in action, and then you can be more certain about their type.
Some people are easier to type than others. If you know someone who believes they are the wrong type, try explaining to them why tests are inaccurate.
