Chocolate Covered Brownie Ice Cream Sandwich

The following recipe is written by Jaime of Sophistimom. Welcome, Jaime! Last year, while developing a recipe for homemade Ho-Ho’s, I accidentally made something more like a thin brownie than a cake. When Katie invited me to write this post for today, it was still cold and rainy here in the Rocky Mountains. So I turned to my food magazines for a little help, as I often do. And that became my starting point. Martha’s ice cream bar had only one cookie layer, so I wanted to make it a little different—more like an ice cream sandwich. To make them easier to dip in chocolate, I inserted wooden Dixie cup spoons, and turned them on end to set. What about you? Need another Ice Cream Sandwich Recipe? After posting last week about what I suspect may be the one and only peanut butter cookie recipe I’ll need for the rest of my life, I don’t want you to think today that I’m contradicting myself by posting these cookies today.

Peanut Butter Oatmeal Sandwich Cookies: where peanut butter meets oats and the two adopt a fluffy cloud of peanut butter filling into the family. A soft and chewy peanut butter oatmeal cookie reminiscent of the Girl Scouts’ Do-Si-Dos and old-school Nutter Butters, the oats add an adoringly nutty flavor to a cookie that houses two of my very favorite ingredients. And while they are soft, they also remain sturdy enough to handle the role of a sandwich cookie. To make the cookies: Preheat the oven to 350˚ F. Ice Cream Sandwiches. Lord help me, I just might burn my tongue trying to lick the pan the next time I brown butter. That nutty, buttery (duh), rich aroma is only slightly indicative of the massive amount of nutty, buttery, richness that will befall your tastebuds and I almost can’t stand it. I’m afraid that if Nate hadn’t have been standing right next to me I would be typing this with gauze taped to my tongue. Hey, anything could happen. But what if – just what if – you balance the richness with a little zing of lemon zest?

Sometimes I meet people who say crazy things like, “Oh, I don’t like dessert,” or “I forgot to eat food today.” OK that’s a lie – I hate celery and would likely never make you eat it. Really though, imagining a world without food – scratch that, a DAY without food – is pure insanity to me. Preheat oven to 350. For the frosting beat together the 4 Tbsp of softened butter with the 1 cup of powdered sugar. Whoopie Pies. I just tried out a book that’s all about Whoopie Pies.

One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her. I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.) It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Homemade Oreos. Fact #1: I made Oreos.

I didn’t think it was possible, either. Fact #2: They tasted just like the real ones.. on crack. Brownie Cookie Dough Sandwiches. I like to call these, "half-baked cookies", after the Ben and Jerry's flavor with brownies and cookies dough.

As some of you loyal readers (hi mom!) May remember, I spent several summers through college working at the gift shop in the Ben and Jerry's factory in my home town of Waterbury, Vermont. If you're ever in the Waterbury area, you should definitely stop by there and take a tour. In fact, if you are there during the summer you might run across one of my lovely sisters. Reason itself for going, I think. Of course, if you are in the Waterbury area it's probably because you are already on your way to the factory.

Besides my lovely sisters. Oh, and parents. I've been playing around with the idea of making a chocolate sandwich cookie filled with cookie dough for a little while. The next step was a cookie dough filling. The end result are some sandwich cookies that have great brownie and chocolate chip cookie dough flavor.
