Raspberry and Peach Popsicles. Raspberry and Peach Popsicles We’ve been eating cold-to-refresh-your-entire-body popsicles. Tons of them. Some made with raspberries; others with strawberries and apple juice, with or without yogurt. And then there were these. Made with irresistible juicy raspberries and peaches that Lulu and I bought when we walked to the farmer’s market this past Wednesday. The fruit was spectacular. Before last week, Lulu had never eaten a popsicle. Can you remember the last time you discovered a food for the first time? And I must say, Lulu was pretty amazing. Ouah ! That’s what my grandfather E. would have done too.

Okay, so my youth is totally showing. Not only did I make butterbeer this week, but when I read that butterbeer is supposed to taste like shortbread cookies and butterscotch....well, it was an easy call to make: butterscotch shortbread cookies ice cream sandwiches! Butterbeer Ice Cream Sandwiches (butterscotch shortbread cookie sandwiches) 1/2 cup packed dark brown sugar 1 tablespoons butter 1/2 tablespoons vanilla 2 1/4 cups cream, divided 1 cup milk 3 egg yolks In a small sauce pan over medium heat, stir brown sugar, butter, and vanilla until butter is melted, sugar dissolved, and the mixture is bubbling.

In a stand mixer combine the egg yolks and butterscotch mixture. Enjoy! Real Fried Ice Cream. I'm sure you are thinking about Cinco de Mayo this very minute. You should be because it's in two days. We look for any excuse to celebrate. We look for any excuse to celebrate with food. This year I thought I'd share a recipe for deep fried ice cream. This would be considered one of my "BIGS". You will need a good quality Vanilla ice cream, corn flakes, flaked coconut and cinnamon. I just happen to find New Simply Cinnamon Corn Flakes. You can, of course, use regular corn flakes. You will need to make 5 scoops of ice cream from a quart size container.

Drop the scoops of ice cream onto a baking sheet lined with waxed paper. Let me tell you what you don't have time for...PICTURES. The ice cream melts too fast. Put the corn flakes in a plastic bag. Pound the corn flakes with a rolling pin or crush the corn flakes anyway you'd like...just crush them. Put the crushed corn flakes into a shallow bowl.
