Trader Joe's. Asparagus + Tofu. I spend a lot of time waiting for spring, and feeling excited about the food that will be available in our markets. But when warm weather finally gets here I find myself wanting to sit in a park or hang out with friends and my kitchen becomes a bit of a ghost town, at least for the first few weeks of spring. The food I do make is simple and not worth sharing here—a basket of strawberries, a salad. It takes a while to find balance in this new season and to resume taking the outdoors for granted.

Asparagus had been waiting patiently for a few weeks before I finally brought some home. One note, I found the sauce a little too sweet for me. (adapted from ) 1 14-oz. package extra-firm tofu, drained 1/2 cup plus 3 tablespoons hoisin sauce 4 tablespoons seasoned rice vinegar 1-2 teaspoons Sriracha 2 large eggs 4 teaspoons Asian (toasted) sesame oil Kosher salt 2 cups panko 1/2 cup cornstarch 1/4 cup plus 1 tablespoon peanut oil 1 pound medium asparagus, trimmed Freshly ground black pepper. Imagine what onion rings would taste like if they were made out of apples instead of onions… and then topped with sugar. Totally easy to imagine, mostly because it’s done and done right here. I never seem to have much luck with an apple corer. See there? The beginning of apple doughnuts! This is a double battered creation. The milk batter adds sugar, spice and flavor, the panko bread crumbs keep the doughnuts crispy. They look just like onion rings, but they’re dessert! Ps.
