School just started for us, and with one kid in second grade and the other in preschool, mornings around here can get kind of hectic! As much as I would love to cook a big, full breakfast for them every morning, time just doesn't allow. This recipe combines all the components of a delicious, hearty breakfast in a cute little pie crust that can be baked ahead, frozen, and re-heated when needed! It is post about a dish my mum use to make for me. My mum worked all her life as a teacher, first as a village teacher , at a time when teachers were really respected and kids would get up early in the morning and walk for few km , on the rain snow or sun to come to the school. A lot of generation passed through 'her hands' and I find it amazing how these kids, now adults with there own families, stop her on the street sometimes and say: 'Do you remember me.. I was in your class in the third row', and she does remember. Even she educated so many kids, she always had time for us. She was and still is tough mum, with a lot of authority, but she dedicated all her life to us...me and my sister.

There is something I inherited from her...we both show our love through food. Now I changed it a bit, add some ingredients I didn't like as a kid and I hope you will like it also. Baked Eggs.

Definitely a fun twist on the typical eggs, bacon and hash browns. Ingredients 1 large baked potato (russett or sweet) 1 Tbsp. butter 2 eggs 2 strips bacon, cooked and crumbled 2 Tbsp. shredded cheddar or gouda cheese 1 Tbsp. fresh parsley, chopped salt and freshly ground black pepper Method Lay the baked potato on its side, and use a knife to carefully cut off the top third of the potato. This was our breakfast Sunday morning. Aren’t they cute? They were very, very good. It’s the whole egg and the toast combo all together in one nice package. These are so easy to make and wouldn’t they be splendid on a brunch buffet table? The best part, you can easily make two, ten, a hundred, whatever your needs are at the moment. I think there are a lot of variations you could do nicely with this recipe, such as, swap out the Parmesan cheese with grated Gruyere or crumbled blue cheese to give a different taste. Use feta and substitute oregano for the other herbs for a Greek flavor. I used sourdough but I think this would also be nice with onion or brioche rolls as long as they are sturdy. Any way you put these together, they will be great. Slice off top of each dinner roll and gently remove some bread until there is a hole large enough to accommodate an egg.
