They are usually the perfect portion size. Occasionally, we will order an appetizer to share and an entree, if we can agree on the same thing:) We also like to make appetizers at home for parties, snacks, and even meals. A few of my favorites are hummus, vegetable spring rolls, and baked zucchini fries. Josh loves to make buffalo hot wings and chicken smothered nachos. Two appetizers we always agree on are edamame and guacamole. Josh grew up in California and lived in Santa Cruz after he graduated from the University of Utah. California is the leading producer of domestic avocados and home to about 90 percent of the nation’s crop. He sat down with his chips and started to dip. Josh was a little hesitant to try this guacamole-he thought the edamame would ruin one of his favorite dips, but he was pleasantly surprised. Edamame guacamole is one of our new favorite appetizers.

I knew we would enjoy eating ripe, juicy plums right off the tree every summer. So far, we have, but the tree has gone above and beyond our wildest dreams. It must really like us, because it keeps producing buckets and buckets of plums. To use up some of our plums, I made a special treat for breakfast, roasted plums with Greek yogurt, honey, and almonds. I love oven roasting tomatoes, asparagus, winter vegetables, etc., so why not try roasting some of our never ending plums?

Josh is not a big oatmeal fan, he prefers cold cereal, toast, or a frittata in the morning. He doesn’t like the mushy texture of oatmeal. I recently got him to try steel cut oats though and he is hooked. Steel cut oats have a different texture, they are chewy and a little crunchy-not mushy at all. If you haven’t tried steel cut oats before, here is a little background information. Steel cut oats take longer to cook than rolled oats, about 30-40 minutes, but they are so worth the wait. I was out of town for work and now I am very behind in life. Sometimes I wonder if I will ever catch up. I hope to make progress this weekend, but I also want to play. It is finally supposed to be sunny in Utah and I can’t wait. Fridays are my day off from work. I use our homemade yogurt as the base and throw in whatever fruits we have on hand. CATALAN FIDEUA. The dish fideua is actually the same as paella except for the main ingredient which is fine pasta instead of rice.

I had my first taste of fideua on a recent trip to Spain. We had it at a busy seaside restaurant in Port Vell in Barcelona. Legend has it that the recipe was born out of necessity, when a fisherman wanted to cook paella with the fish he had just caught. Unfortunately, he discovered that he ran out of rice grains. Finding fideua (generic word for pasta) in the cupboard, decided to use that instead. Ingredients: 300 gms. of fine uncooked dry pasta, cut into 1 1/2" lengths250 gms. raw squid, cleaned and cut into rings250 gms. prawns, shelled and deveined (use the heads and shells for stock)1 cup chopped tomatoes (I used tinned tomatoes)3 c. very good quality fish stock3 cloves garlic, crushed1/2 c. chopped parsley4 tbsps. olive oil1/2 each of sweet red and green pepper, cut into 1"x1" squares1/2 tsp. saffron threads Method: All rights reserved ©Adora's Box Copyright 2011.
