This “recipe” is a part of Three Dishes, a new series that debuted in the Obsession issue: an exploration of a trio of riffs on the same dish. Think of each dish as a route on a map showing the many ways deliciousness can be reached from the same origin point. The issue featured Mark Ladner’s Gnocchi alla Romana, David Chang’s Gamjatang, and, also appearing below, Marco Canora’s Gnocchi.

I started making these gnocchi when we opened Craft in 2000, and we’ve been making them every day at Hearth for eleven years. It’s a craft, like playing the guitar. You make gnocchi every day, and well, you’re gonna get pretty fucking good. Everyone wants to say, “Oh, those are Marco’s grandmother’s gnocchi,” and it’s been in print that they are, but they’re not at all. This is not my grandmother’s recipe; this is not my mom’s recipe. I want to preface this: I’m not a big intellectual, conceptual, understand-how-the-science-works guy. Once you start the process, you go to the end. Now it’s the spread. The Guide to Chinese Dumplings.

When we decided that February at LuckyPeach.com would be Dumpling Month, our first call was to the Cleaver Quarterly. The Cleaver is a print magazine devoted entirely to Chinese food, produced in Beijing by a trio of super-nerds—Jonathan White, Lilly Chow, and Iain Shaw. We knew that their Chinese-dumpling knowledge would make our stateside reporting look like a sad, slumpy, soup-just-leaked-all-over-the-bamboo-steamer xiao long bao. They started with a dumpling infographic they made for their most recent issue and built it out, giving descriptions for thirty-six (!) Steamed, pan-fried, boiled, deep-fried, and sort-of dumplings that can be found in China and beyond. AI WO WO 艾窝窝Some say these confections—sticky rice stuffed with a sweet gravel of sesame, melon seeds, walnuts, and hawthorn jelly—were invented for Xiang Fei, a homesick Uighur concubine. Gut Bacteria May Affect Mental Health in Humans. Researchers working with animals have shown that altering their gut bacteria can affect their stress levels and make them less anxious. In humans, the link between gut microbes and mental health is just starting to become clear. A new study published in Psychopharmacology suggests that fostering the growth of helpful bacteria helps modulate how we process information and could perhaps help ease anxiety and depression.

There are probiotics (“good” bacteria), and then there are “prebiotics,” ingestible fibers that help augment the growth of our beneficial indigenous microbiotia. And researchers are increasingly interested in knowing if (and how) these could be used to improve a patient’s response to psychiatric drugs. At the end the three-week treatment period, the volunteers completed several computerized tasks that allowed the team to assess how they process emotionally salient information -- and whether they were biased towards the positive or the negative. 34 Clean Eating Recipes You'll Actually Want To Eat. Recipe: Chicken Liver Mousse Pâté with Port Gelée — Our Daily Brine. “I’ve always loved the taste of liver!” That’s not something you’ll hear too often.

On the other hand, chicken liver pâté plays this role of ambassador; a shining star that’s somehow managed to bridge the divide between the liver lover and those with less sophistication. Mousse or Pâté? Is it a mousse or is it a pâté? The texture falls nicely between; the gelatin providing body, yet retaining a spreadable consistency. It’s likely the classification of mousse is most felicitous, as cream and gelatin are key components, and the resulting texture is more refined than one might typically associate with a “pâté”. As to what it’s called, I’ll let you decide. Etymology of Pâté The English word pastry, Italian pasta, and French pâté all go back to a suggestive group of ancient Greek words having to do with small particles and fine textures, according to Harold McGee.1 Chicken Liver Mousse: Two Methods There are two methods by which you can make this mousse: By sauté or bain-marie.
