I’m not really sure what the most popular fish for grilling is, but if salmon isn’t at the top of the list it must be near the top. I came across an interesting article in a recent issue of “Summer Entertaining” from Cook’s Illustrated for an interesting take on Salmon and Tuna Burgers. Just like all the recipes/articles in a Cook’s Illustrated magazine this take on a great summer classic is full of wonderful technical information and most importantly the reasons behind the techniques.
