It was back in November when I made this pasta… and I remember the day perfectly… It was real sunny. My hair in a scrunchy, the stretchy grey comfy-pants are on, I was totally rocking the whole I-don’t-give-a-care-what-I-look-like-it’s-my-day-off look like nobody’s business. I’d once again put laundry on the back burner that afternoon {who has time for THAT?} , turned on a little Florence and the Machine, opened the fridge to get the creamer for my coffee and then I spied the champagne and then… the cream. POW {that’s the sound it makes in my brain when a recipe happens}! Please don’t think I ran out and bought champagne. Butter a baking dish and set aside.

On the large holes of your box grater; shred a cup of Pecorino Romano or Parmesan cheese. Season the ricotta with a little extra salt and pepper if you haven’t already. Since we are all busy preparing for the holidays, I will be writing shorter posts for the next two weeks and sharing some recipes that are great for entertaining during this busy time of year. Lasagna is one of my favorite dishes to prepare during the holidays. A beautiful pan of piping hot and cheesy lasagna is perfect when entertaining a large group of people. Make it ahead, bake it and add a salad, a loaf of Italian bread and dessert and you have an incredibly satisfying meal. This recipe is my favorite after trying countless recipes over the years.

Chris originally thought we should name this blog “The Timeless Kitchen” because the oven has no clock. That’s right, read ‘em and weep, literally. At some point the LYK oven’s clock shorted and started beeping uncontrollably, as our smoke alarm also tends to do. Naturally, the previous tenants thought it best to simply rip out the clock. For our first few months living in the LYK we had to guess what the numbers on the temperature dial were since they had all conveniently worn off. Considering the time of year I think it is very fitting. Maybe I should go red and green when Christmas comes around? Got any green and red recipes that I can try out for Christmas? In keeping with the autumn orange theme I got the idea to try a sweet potato gnocchi covered in gouda cheese sauce. The idea was to do it in a stovetop mac and cheese kind of style. I have never made a potato gnocchi before. First and most important you need 1 pound of sweet potato. In the photos I as preparing a double recipe so that is why you see so many potatoes. Pierce the potatoes with a fork. Microwave the potato for 5-6 minutes on each side, until tender. Slice the potatoes in half and let cool.
