Alright, I admit it. I sometimes make casseroles or other dishes using that weird, gloppy cream of whatever soup from a can. It’s quick, it’s easy, and it’s cheap.
3 (10 oz.) pkgs. frozen broccoli or 2 bunches frozen 2 c. sliced cooked chicken or 3 chicken breasts 2 cans condensed cream of chicken soup 1 c. mayonnaise 1 tsp. lemon juice 1/2 tsp. curry powder 1/2 c. grated processed cheese 1/2 c. buttered bread crumbs Cook broccoli in boiling water until tender. Drain. Arrange stalks on greased 9x13 inch pan.
Hot, cheesy, spinach dip, perfect with crackers or baked chips. I guess this is dip week, I thought a hot spinach dip would be fitting after posting yesterday's cold spinach dip. There's a place for both versions, but if I had a choice, I'd go for the hot version. I like to bake this in the oven until the edges get golden, but if all you have handy is a microwave, it will do. Great for parties or serve this as a snack for the kids.
If I ask my kids what they want for dinner, there's a ninety percent chance they will say pizza. They love it, as most kids do. I guess I have an affection for it too, but we don't indulge too often. If I had to choose a favorite pizza, it would be the Hawaiian, but no one else in my household appreciates its flavors like I do, too bad for them.
