Banana Split Mini Bites For once I made something mini for portion control and not just for the cute factor. My little guy had some friends over the other day and of course with a mom who is a baker, the expectation is dessert will not only be good but it will be fun. And I was asked, by friend Caroline, not to let her boys eat too much dessert.

Keeping all things in mind what I served is what you see here. Here’s what wasn’t a hit and what I learned. *gulp*...my birthday. Whew! There. I said it. I know my mom's proud and shocked. For weeks, I have been planning out what type of cake I wanted to make for my birthday. I wrote down notes for my quintessential cake. Since I'm not very creative, I didn't add any frills such as whipped cream decorations or pieces of fruit, and ultimately, I was happy with that decision. I really, really, really don't mean to brag, but every single layer was perfect. I knew that I couldn't keep this amazing creation in my house for long, so via text messaging and quick visits, I shared slices with my nearby colleagues/friends/neighbors (yes, they wear all three of those hats; I live in graduate housing, remember? Yea… I really do… I think I really, really like you! I think I like you so much that I’m gonna share a recipe that will just knock your socks off. Soooo… you may want to sit down for this and prepare yourself, **drum roll please** Red Velvet Pancakes! Red Velvet Pancakes! Red Velvet Pancakes!!! Did you get that?!?! I thought it would be a great idea for those who love breakfast or at least pancakes as much as I do to incorporate one of the most yummiest desserts ever.

Cookies ‘N Cream Oreo Fudge Brownies

What a way to start the week! :) Last weekend as we were exploring Blue Ridge, GA, we stopped by this charming little bakery. They had all kinds of delicious looking homemade brownies. Oreo brownies, peanut butter brownies, raspberry cream cheese brownies… *groans* Kevin totally had his eye on the Oreo brownies.

We didn’t get any there (we were too busy sampling the fried Oreos) so I promised to make them as soon as we got home. I used this recipe from Picky Palate for Ice Cream Sundae Brownies. Cookies and cream ice cream, chocolate chips, and hot fudge… It all gets added to the brownie mix! This thick batter is perfect for layering.. nothing is going to sink to the bottom here! Oh, baby. Come to mama. Layering the Oreos whole is totally the way to go! All these babies need is a big, huge scoop of vanilla ice cream.

It Tastes Like Cake Batter. And in addition to yummy in my tummy owl cupcakes, we also had this: It's dip made from Funfetti cake mix. And, in fact, when made it tastes exactly like cake batter. So, if you're a cake batter fan, this dip is for you. The best part? It only has three ingredients. Doesn't get any easier than that. Here's what the recipe calls for: 3tbsp cake mix 2tbsp plain yogurt (feel free to use fat free if you so choose) 1 tbsp cool whip So, this serving size is perfect....for one. However, if you plan on sharing, which you probably will, then you'll need to make a wee bit more. By this I mean that I dumped the whole box of cake mix into a bowl and added yogurt and cool whip until it tasted right.
