Crispy Parmesan Asparagus Sticks. Who would have ever thought I would get excited about seeing something green on sale in the grocery store? Not me. But that’s what happened when I walked by these super thin asparagus spears. How often do I find thin asparagus that doesn’t look half dead and is on sale? Rarely. And I sort of like asparagus. Sort of. The whole upchucking thing usually doesn’t happen until the third of fourth spear. But I figured I could possibly prevent that mess if I coated these in something crispy and cheesy.

These were so incredibly easy to make and tasted delicious – kind of like little asparagus “fries.” I also think that these will taste even better with thicker asparagus spears. [print_this] Crispy Parmesan Asparagus Sticks 1 bunch of asparagus (mine had about 30 spears) 2 egg whites 1/4 cup flour (I used whole wheat pastry flour) 1 cup seasoned panko breadcrumbs 1/4 cup parmesan cheese salt and pepper Preheat oven to 425 degrees. Snap off the tough ends of each asparagus spear. [/print_this] Okay. Dorie Greenspan’s garlicky crumb coated broccoli.

There’s really not much to say about this week’s French Fridays with Dorie recipe. Garlicky crumb-coated broccoli (p 334) was a huge hit with me. All week. I made this dish at least 3 times because I found it incredibly difficult to photograph (and clearly didn’t quite “get it” after so many tries!). Normally I would serve this as a side dish with some meat but Neil was out all week and I don’t generally cook for myself when he’s not there.

I ate this mixed in with some pasta, on top of rice and as a snack. It’s pretty versatile. As Dorie herself says, “rolling broccoli around in some buttery breadcrumbs flavoured with garlic, lemon and herbs is [...] transformative.” Want to join French Fridays with Dorie? And to prove it, we’ll fry anything: oreos, twinkies, pizza, hot dogs, ice cream and the list goes on and on. Fried food has pretty much been considered “white trash” for as long as I can remember. Of course fried chicken, french fries and onion rings aren’t on the white trash list, they’re just good ol’ American menu items. While I’m generally not a huge fan of fried foods (most of the time I just don’t like the taste of the oil they’re fried in) I have found a soft spot in my heart (and belly) for a recently discovered fried foods recipe: avocado fries.

Yes, you read that right…fried avocados (done up in french fry fashion). I’ll confess, I didn’t make these as a stand alone item or even as a side dish. Since February is National Heart Health Month, I thought I would also give you a few more reasons to feel good about eating this avocado recipe. Roasted Green Beans with Garlic, Lemon, Pine Nuts & Parmigiano-Reggiano - Once Upon A Chef. 5 stars based on 6 votes Share on TwitterShare on FacebookShare on Pinterest If I told you I cooked vegetables like this every night of the week, I’d be lying. The truth is that most nights, between soccer practice and homework, I’m steaming frozen broccoli in the microwave in a harried attempt to serve something green. But if I were entertaining or, say, asked to bring a vegetable to someone’s house for a holiday dinner, this is exactly the kind of thing I’d make because it’s impressive and easy to do ahead of time. What makes it so good is the combination of flavors and textures: tender and caramelized roasted green beans, mellowed chunks of garlic, lemon-infused olive oil, crunchy pine nuts and nutty Parmigiano-Reggiano. The dish takes a bit of time of prepare but it’s not hard.

Once you’ve got your beans ready, simply toast your pine nuts in a small skillet to bring out their flavor. Next, toss the green beans with garlic, lemon zest and seasonings… Vegetables don’t get much better. Fried Green Beans Recipe : Patrick and Gina Neely. Lemon Green Beans.
