Last night I was feeling very nostalgic and missing home so I decided to try to find a recipe for Toasted Ravioli. This is another St. Louis specialty and is so darn good I get it any chance I can. The only issue I have is that they are usually fried and I'm not a big fan of frying if I can help it. For me frying is just too darn messy and I tend to burn myself nearly every time I fry foods. Baked Toasted Ravioli Ingredients 1 egg white 1 teaspoon water 1 cup bread crumbs 2 teaspoon dried Italian seasoning 2 tablespoons freshly grated Parmesan cheese 1 (25 ounce) package cheese and/or beef ravioli, thawed if frozen cooking spray Preheat an oven to 400 degrees F (200 degrees C).

Beat together the egg white and water in a small bowl. Mix bread crumbs, oregano, basil, and Parmesan cheese in a large bowl. We easily forget how blessed we are to have caring people in our lives, to have good food on our plates, and to have opportunities in our future. I feel so robbed of all the years I could have been eating bacon wrapped jalapeno poppers! This is a case of ignorance NOT being bliss – but I plan to make up for lost time but eating them a LOT from now on! I have to credit this guy for making me see the light, because when I saw his photo on Foodgawker a few weeks ago I was blown away by the recipe possibilities! I made my own version of course, but will forever be grateful to blogchef for the recipe idea! My hacks: I baked them instead of grilling them, and added salsa verde and cheddar to the cream cheese for some more flavor.

There are some things I would do differently next time I make them though. 1) use thinner bacon – I had thick cut on hand and it took too long to cook and was chewy. 2) Par cook the bacon in the microwave for about 3 minutes to render out some of the fat and get it started.
