She was going to make cake balls for her sister’s wedding, discovered that they are a pain to dip (I AGREE!! I WOULD LOVE MAKING CANDY IF IT DIDN’T EVER INVOLVE DIPPING THINGS IN CHOCOLATE! ARRRRG!) , and then came up with this idea all on her own. I didn’t discover until after I’d copied her idea that she’s not the first to have it but it just goes to show, great minds think alike. Anyway, cupcake bites are basically cake balls made to look like little cupcakes. What is a cake ball/pop you ask? OK, so to make these babies, just mix crumbled cake with frosting to make your cake ball centers. Chocolate Chip Cookie Dough Cups. I’ve noticed lately that a lot of my friends are hesitant to cook for me. They’re afraid that the food won’t turn out perfectly or that I will hate what they choose to make. I wish they didn’t feel that way… I love sharing food with my friends and family, and I don’t want anyone to be intimidated! So, today I thought I’d share one of my recipes that turned out slightly less than perfect. It’s not a miserable failure, but I don’t think it’s one of my best, either. I’ve had Easter on the brain the last few days… Normally I make a half dozen different cookies and candies for Easter, but this year I’ve been pretty busy, and it just hasn’t happened.

Who could resist cream-filled chocolate sandwich cookies? Not Me! Especially the double-stuffed Oreo cookie, it’s one of the best cookies for dunking into a cold glass of milk. I went out yesterday to do my weekly shop, came home, and before I was able to bring in the first grocery bag Matt was hunting for the cookies and cream ice cream. One of Matt’s favourite desserts of all time is cherry cheesecake and I thought to myself why not Oreo Cookies and Cream Cheesecakes, that should satisfy his craving. Plus these cheesecakes are super easy to prepare, everything comes together in one bowl and there’s no crushing chocolate wafers with a rolling pin, then melting butter, baking the crust first and then baking a second time when filled.

Now I'm making cupcakes and more cupcakes. In our family when it comes to dessert we used the democratic voting system. Who says the politics are not good? Three kids many choices for dessert so we vote. When they looked thru the book the two older ones Brandon and Cass agreed at once for the oreo cupcakes, Alex wanted the marshmallow ones.
