The scent of the russet reminds me of toasted hazelnuts. The Victorians liked to use the russets in their paintings because they look rustic and add atmosphere. Unfortunately the high street supermarkets do not like to stock this group of apples, as they are perceived as being ugly. Ross has a special love for apples and has always dreamt of living on a plot of land big enough to have his own English apple orchard. Unfortunately our garden is not big enough for a orchard but as a consolation we discovered Brogdale Farm which is the home of the National Fruit collection.You can visit this farm and learn all about the different types of russets and see how beautiful they are. We love russet apples not only for their look but also their naturally sweet flavour. 500g russet apples, peeled and core removed50g honey50ml fresh apple juice or cold water50g unsalted butter1 vanilla pod seeds scraped (optional)

It was set on a cast iron trivet that sat over a slow, smoldering set of wood coals. They had this special paddle that was about 8 feet long and made of oak. It was sort of a shoe horn looking thing and everyone would take turns all day long stirring. If it wasn't stirred, especially toward the end, it was apt to scorch and after all this work no one wanted it scorched. At the end of the day out came the fried chicken and sides along with a huge heap of deep fried biscuits. Have you had enough yet? I promise to cool it with the apples after this, but I just had to share these easy and delicious recipes since apple season is almost over. Thankfully apples are available year round, but they don’t seem to taste quite as good as they do in the fall. The great thing about this is that it’s two recipes in one. Start with 5 pounds of apples and you can make both applesauce and apple butter in the span of about 2 hours (less than 30 minutes of which is actual hands on time). I always figured making homemade applesauce was easy, but my laziness won out in the end.

I love maple syrup and it’s a much healthier, nutrient-rich alternative to sugar so I subbed it for the sugar in the original recipe. Apple Butter Recipe.
