The Perfect Chicken Schnitzel | Serious Eats. Chicken Schnitzel. [Photographs: Joshua Bousel] I've been a contributor here at Serious Eats going on six years now. For most of that time, I've had a narrow focus on grilling and sauces. So I'm excited to announce that starting today I will be expanding into new recipe territory. Sure, a live fire is still my preferred cooking method and grilling will remain a central focus, but there are so many other foods that are important to my life and kitchen. It's with renewed enthusiasm that I'm now going to be sharing them with all of you. If there's one dish that I would say defines me most, it isn't grilled at all: it's chicken schnitzel. After we graduated, my old classmates and I started a semi-regular Shabbat tradition. Over all that time of cooking and eating schnitzel, I've refined my method to what I think is perfect—I still order schnitzel at restaurants, but it's rarely as satisfying as the version I make at home.

My absolute favourite thing to do with corned beef leftovers has to be making reuben sandwiches . There is just something magical about the combination of tender corned beef, tangy sauerkraut, creamy Russian dressing and Swiss cheese wrapped in rye! I like to grill my reuben sandwiches to melt the cheese and give the rye a nice and crispy texture a warm buttery flavour.

Reuben sandwiches are pretty easy to make though there is one tricky part and that is dealing with all of the liquid in the sandwich from the juicy corned beef, the sauerkraut and the Russian dressing. No one likes a soggy sandwich and luckily there are some easy ways to deal with the problem. First you want to really squeeze the excess liquid from the sauerkraut and if it still has a lot of moisture you can saute it in a pan to get rid of even more of it. Next, you can also lightly toast the bread so that it can better withstand the liquid. It's so easy to make your own Russian dressings! Reuben Sandwich ingredients. Nigel Slater’s sweetcorn and bacon fritters recipe. The recipe Pull the leaves and fine fibres from 2 plump sweetcorn. Place them stem-end down and slicing from the tip cut the kernels from the cobs. They will probably come off in strips. Crumble into kernels and place in a mixing bowl. Finely chop 2 spring onions and add to the sweetcorn, then stir in the yolks of 2 eggs.

Remove and discard the rind from 6 rashers of bacon, then chop the meat finely and stir it into the sweetcorn. Season with coarsely ground black pepper and salt. Warm 3 tbsp of sunflower oil in a nonstick frying pan then add a knob of butter. Lift the fritters from the pan and drain briefly on kitchen paper before serving. The trick The bacon only gets a brief cooking, so make sure the fritters aren’t too thick, so the heat gets to the middle of them.
