Nigel Slater’s ham recipes with apricots and watermelon recipes

This applies to bread, of course, unless you are making toast; mozzarella, peaches, lettuce, scones and muffins, smoked salmon, roast chicken, cold ham, but not beef, which is far more tempting in softly undulating, rose-pink folds. There is a casual generosity in large, jagged pieces pulled apart by hand that you don’t get when something is thinly sliced or tortured into cubes. Soft edges, gently torn, feel easy and relaxed.

And so it was with the ham salad I made this week, the meat torn roughly into frayed shards and tossed with ripe fruit. I used watermelon, whose sweet, cool juice is so refreshing with the salty quality of cured meat, but I could have used slices of cantaloupe or honeydew, nectarines or mango. I used a yogurt dressing, flecked with shredded basil leaves and stirred through with a little olive oil. December has been a mad flurry of work, job applications, and more work. And it didn’t help that I managed to get the flu during this time – believe me when I say it is very hard to work when you’re all sniffly, have lost your voice, and have blocked ears. But I’m back now (still sniffly but much better), and that is what matters. :) I’m not exactly sure why, but I always get homesick when I’m ill or stressed. And in the last few weeks, I’ve really wished I could just hop on a plane and go home.

One dish that always reminds me of home is red (adzuki) bean soup, which I grew up eating. The beauty about this dessert/tong shui is how simple it is to make. To be on the safe side and be certain that the beans will soften, you should soak your red beans overnight. I also highly recommend using some sort of mandarin/orange peel in the soup. Pumpkin Soup with Heston Blumenthal on Woman's Hour. In Braise of Cheap Meat. Braising is one of my favorite cooking techniques - it's part roasting and part stewing and it can turn the toughest imaginable cut of meat into something a toothless hillbilly could eat.

In Braise of Cheap Meat

Essentially, you take piece of meat like a pork shoulder, lamb shank, or beef chuck roast (all cheap cuts) - muscles that work hard (tough), run in multiple directions (tough), and are packed with connective tissue (tough) - and cook them with some liquid in an enclosed pot with low heat. The liquid and slow cooking turn these tough cuts into tender, juicy, richly flavored meals. Braising One distinguishing characteristic of braising is that it incorporates both wet and dry heat. Typically you use a large chunk of meat that is only partially covered with liquid. Making No-Knead Bread. Rice and lentils.
