Reidy applied to business schools selling a somewhat grandiose vision: an urban farming system that could disrupt an entire city's food supply chain. Instead of shipping in produce from out-of-state or even local farms, cities could grow it on their own. Not in quaint corner plots or community gardens but on a commercial scale. Reidy had seen the so-called "vertical farming" systems succeed in places like Montreal and New York City. Reidy set his sights on the Johns Hopkins Carey Business School and the city of Baltimore. Epidemiologist David R. Jacobs, Ph.D., of the University of Minnesota calls it food synergy, and he, along with many other nutritionists, believes it might explain why Italians drizzle cold-pressed olive oil over tomatoes and why the Japanese pair raw fish with soybeans. “The complexity of food combinations is fascinating because it’s tested in a way we can’t test drugs: by evolution,” says Jacobs. And, he adds, “it’s tested in the most complex of systems: life.” Photo: (cc) James Lee/Flickr. Juicing Assistant. 5 Gallon Bucket Aeroponics - The easiest aeroponics system to build - Full Class HD.
