This weekend I stumbled across meyer lemons for the first time and I grabbed some right away. I had been hearing about meyer lemons for a long time and I had been wanting to try them. A meyer lemon is a cross between a lemon and a mandarin orange which sounded like a great combination. I really like using lemons in desserts and one of my favorites is the simple lemon bar.

Something I could sink my teeth into. Something to maintain my weight. So I made this treat with a few of my favorite things. Cheesecake. Chocolate. And these cookies. If you ever fly Delta, then you’ve probably had them before. They’re a crunchy, no-frills, sans chocolate type of cookie. So I thought they would be great to use for the cheesecake crust. Throw the cookies into a food processor and chop them up into beautiful golden brown cookie powder. About 1 1/2 cups worth. Then add 3 tablespoons of brown sugar. Don’t you love how packed brown sugar looks? To make the crust, mix the cookie crumbs and brown sugar together. Mix up the cheescake ingredients and pour it on the crust. Oh yeah! Then bake it at 325 degrees for about 45 minutes. And let it cool. And try not to eat it. Then whip up some chocolate ganache to pour on top. Oh yeah. Spread the chocolate evenly on top of the cheesecake and then refrigerate overnight. Caramel Brownie Cheesecake.
This is a monkeyhead concoction so please don’t be disappointed with me that it’s not 100% homemade.
Sometimes as a mom you have to go with your childrens ideas in order to lift their creative wings. Monkey One loves cheesecake and caramel, Monkey Two has a passion for brownies you put the two of these knuckleheads together and look at what they come up with… Caramel Brownie Cheesecake. You gotta love the way these boys think. To see their vision come to fruition we used one of our favorite brownie mixes, a no bake white chocolate cheesecake recipe from Williams-Sonoma and we tried Jamie’s homemade caramel recipe from My Baking Addiction. My girl has it going on in the kitchen y’all, get ready to drool. M2 loves his brownie mix above because while I’m at work he can whip up a batch with my surfer and feel like he has stepped out of his sous chef role into the postion of head honcho.
While the boys made the brownie mix I lined a springform pan with parchment paper. Voila! I think yes!! My daughter just recently celebrated her birthday. As I was looking for cake ideas I came across this idea for making a rainbow cake and of course my daughter and I both loved it. Who wouldn’t want a rainbow layer cake for her birthday? I took two white cake mixes and mixed them up in a large bowl according to the directions on the box. When each color is mixed, place batter into 6 separate round 9 inch pans. After all the cake layers have cooled, place your bottom layer (purple) onto your cake plate. I have learned the trick for getting a nice clean frosting layer without all the cake crumbs in it. This layer will have a lot of crumbs in it, but don’t worry, they will not show.
