What I do tend to avoid are large stinky messes. Fried foods are notorious for producing an enormous mess.

The bubbly caldron of hot oil leaves a lingering smell which takes months and multiple bottles of Febreze to remove. But when I became the proud owner of three Walla Walla onions so fresh the dirt was still attached – my first thought was onion rings. In order to avoid the mess I set out to make oven-fried onion rings.

If you, like me, love the grease but hate the mess then let us celebrate in the name of laziness for a recipe that takes more time to clean the grease off our fingers than off our counters. Homemade Onion Rings « Straight from the Farm. February 23, 2010 at 10:28 pm Jennie Oh the humble onion. How often I have overlooked thee in my winter local food stores. You might ramp up the flavor in a soup or an omelet, nevertheless I just wasn’t thinking about what you might do as the star of the show. But as we enter the “leanest month” – March – for locavores, I gave you a piercing stare as you hung there in your little mesh bags from a peg in my dry cool dark basement where you hold up indefinitely without a peep of complaint. What can I do with you? Caramelized onions or French onion soup would perhaps be more predictable fates for a large stash of onions like that leftover from my plentiful onion harvest in the garden last summer. I love onion rings with that crispy salty outside and that soft sweet onion on the inside. Unfortunately I don’t have the physique to get away with eating fried foods in any great quantity. Besides burning the first batch, I declare these a solid success!

Thanks S.T., and good luck! Rocky Road Brownies | A Dash of Sass. I was fortunate enough to grow up within driving distance of the Happiest Place on Earth. I was even more fortunate to have the chance to work during my teen years. One of the best perks of the job was the fantastic discount on all things bought within the Park … including the homemade candy and fudge!! Along with my dear friend Josh, I would trek down Main Street to the Candy Palace and buy a tray of freshly made Rocky Road. Oh, chocolate! Oh, marshmallows! Oh, walnuts! This was heaven in a plastic wrapper and, as we all know, there are no calories in anything consumed at the Happiest Place on Earth (wink!) It has been years since I had the benefit of that discount, but when I had an opportunity to celebrate Josh’s birthday with him, I couldn’t resist a dessert that would bring back those Oh-So-Magical memories of Main Street.

The original recipe called for an 8 x 8 brownie pan, something which my kitchen seems to be perpetually lacking. . (1) They are so much yummier than you remember! Pepperoni Pizza Puffs. If I ask my kids what they want for dinner, there's a ninety percent chance they will say pizza. They love it, as most kids do. I guess I have an affection for it too, but we don't indulge too often. If I had to choose a favorite pizza, it would be the Hawaiian, but no one else in my household appreciates its flavors like I do, too bad for them. So when my kids came home from school and I had this afternoon snack waiting for them, they were pretty excited to be having pizza at 3 PM. These are the simplest, yummiest little bites. If you have a mini muffin pan you are good to go. Preheat oven to 375o. Stir the batter and divide among the mini-muffin cups.

I have to admit that I am one of those people who enjoys the pizza dough a little bit more than the toppings sometimes.

In my opinion, the dough can either make or break a pizza in most cases and for me, it’s biting into the chewy and warm crust at the edge of the pizza that defines the pizza-eating process. You can top a pizza with all the best toppings in the world, but if the dough is tough or soggy, then you might as well use the worst because the pizza just won’t be good. And then there’s always that last “golden bite” of pizza at the end with the perfect ratio of crust to cheese to topping to sauce that is perhaps, even better than the first. The dough is definitely the foundation for a great pizza; with a sound and tasty base, the toppings are given the best chance to showcase all their flavors as well. This recipe, for a crust lover like me, is wonderful. Pizza Bites Pizza Bites, adapted from this recipe Ingredients Directions 1. 2. 3. 4.
