Mini Ham & Cheese Quinoa Cups

The perfect breakfast or snack! I had this whole spiel ready about how real men do, in fact, eat quiche, as demonstrated by Ben who housed nearly a dozen Mini Ham and Cheese Quinoa Cups that resemble wee baby quiche for dinner, but then I remembered that quiche have crust and Mini Ham and Cheese Quinoa Cups do not, so in reality they’re more like mini frittatas and well, all was tragically lost. Ok, let me explain. First of all, Mini Ham and Cheese Quinoa Cups might be my new favorite thing on the planet. I may or may not have squealed with delight when they came out of the oven. They’re basically mini frittatas containing eggs, egg whites, cooked quinoa, shredded zucchini, cheddar cheese, and diced ham, but I couldn’t name them Mini Ham and Cheese Frittatas because Ben won’t knowingly eat frittatas. Whenever we have overnight company, everyone insists these are the best pancakes they've ever eaten. For those afraid of sour milk, it is simply a substitute for buttermilk. I use soured milk in every recipe that I have that calls for buttermilk and it works like a charm. It does NOT make things taste sour! Another note: the pancakes will start to "foam up" after you stir them. I used real buttermilk instead of soured milk and doubled the recipe. I have made this recipes about 40 times since finding it about 3 mos ago. Christmas Breakfast Sausage Casserole Recipe.

Coming to a Store Near You

The month of luuuuuurve is upon us. ♥ ♥ ♥ Only 13 more days until Valentine’s Day! What are your thoughts on Valentine’s Day? An excuse to show your loved ones even MORE love than usual is fantastic, in my opinion. I embrace it with open arms…literally. Hugs are free on Valentine’s Day! I’ll never forget the first Valentine’s Day Ben and I celebrated together as a couple, in college. Speaking of fail’s – remember my pumpkin pie oatmeal fail last week where I forgot to add the brown sugar and half the amount of oats?

In the mix: 1/3 cup old fashioned oats2/3 cup unsweetened vanilla almond breezecinnamonvanilla1/2 “baked” apple (1/2 peeled, chopped apple nuked for 90 seconds with cinnamon, honey and a splash of water) Bake at 375 degrees for 14 minutes, top with sliced almonds, 2 teaspoons of brown sugar and bake for 14 more minutes. Oh, you guys, so fantastic! How do you like that for a Monday morning breakfast? A Great Harvest. Good morning everyone!

A Great Harvest

I feel SO much better today – I went to bed at 9:00 last night (yes, that G in IGE occasionally stands for Grandma) and awoke feeling like a million bucks. Thanks for your well wishes! Story! Yesterday afternoon during lunch, Ben and I paid a visit to our local Great Harvest Bread Co. – how Kath of us, no? I had never been and wasn’t sure what to expect, so you can imagine how delighted I was to find racks of freshly baked, uniquely flavored breads, sweet cookies and chewy fruit bars, locally made peanut and almond butters…and FREE SAMPLES!

I chose to sample the Cranberry Orange bread. I ended up buying a loaf of the Cranberry Orange bread (which, bonus – is whole wheat!) Bread-head! Here’s Ben’s White Bread. And my Orange Cranberry whole wheat bread. I’ve said before that I am not much of a “bread person” – but throw a specialty loaf in my direction, and I’ll love you forever :) Just look at that! Based off of Betheeny Frankel’s recipe (via Vitamin G!) In the mix: 1.
