It’s crazytown here, but when my parents came for a visit this weekend, I decided I would find the time to make them this breakfast.
I’ve been hoarding the recipe for about 10 years and it seemed high time to try it, what with blueberries in season and all. I am soooo glad I did, and you will be too. Look! I googled the recipe before I posted in hopes of linking you to a proper photo and an already-typed recipe (lazy!!) Blueberry Cheesecake Flapjacks (makes 16 pancakes and serves up to 5) The cheese: 1 8-oz. package of cream cheese, softened1/2 of an 8-oz. carton frozen whipped dessert topping, thawed (my note: I used the light version, but still felt icky about all the chemicals I was putting into my family’s breakfast, so I decided next time I’ll whip up some cream) The syrup: 1 cup maple syrup (I used 3/4 cup)1/2 cup fresh or frozen blueberries, thawed The pancakes: Enjoy!
