Chewy Chocolate Chip Oatmeal Breakfast Cookie. Oats, ripe bananas and chocolate chips – these healthy, "breakfast" cookies are chewy and delicious, and made with just three ingredients.

I was craving chocolate this morning, and decided to whip up a batch of these yummy cookies for breakfast (I ate 4 cookies, for 4 points). Some of you may recognize them, in the past I made them with walnuts in place of chocolate chips. I would never eat cookies for breakfast, but these are made with healthy ingredients – oats, bananas, and a handful of chocolate chips (antioxidants, right?) With no added sugar or flour. If you wanted, you could replace the chocolate chips for cocoa nibs, raisins, craisins, whatever! The riper your banana the better, so make these when your bananas are almost black and freckled with dark spots. I personally think these are best eaten warm, right out of the oven. I eat it almost every morning. Old-fashioned or steel cut oats, baked oatmeal or boiled, it’s all good. I have experimented with countless baked oatmeal recipes and this is a hands-down winner with everyone in my family. When Smart Balance–a company that makes butters, oils, peanut butter, and other products aimed at avoiding trans fats naturally and reducing saturated fats, total fat and cholesterol–asked me to participate in a national recipe contest, I thought, “NO WAY!” Heck, I was only playing around with a business Facebook page when I started The Fountain Avenue Kitchen. My friend Lauren made us this baked oatmeal for breakfast on Sunday morning in Georgia; it was so delicious (and easy) I knew I had to share the recipe. Baked Oatmeal Makes ~4 servings This simple, nutritious, and versatile breakfast recipe is perfect for a group brunch or to make ahead so you have a healthy breakfast ready to go during the week. Enjoy plain or topped with yogurt or extra fresh fruit. Ingredients: Dry: 2 cups uncooked quick-cooking oats1/2 cup brown sugar, packed1/3 cup dried fruit (we used raisins)1/4 cup chopped nuts (e.g. walnuts or almonds; optional)2 Tbsp. cinnamon1 tsp. baking powder Wet: 1 & 1/2 cup skim or low-fat milk1/2 cup applesauce1 very ripe banana, chopped (optional)2 Tbsp. oil1 egg, beaten Instructions: Preheat oven to 375. 1) In a large bowl, mix dry ingredients. 2) Coat an 8-inch baking dish with cooking spray; pour in batter. 3) Bake for 20 minutes; fork check to test doneness.

(Serves One!) 1/2 cup rolled oats (50g)1/4 tsp pure vanilla extractsweetener, such as 1 1/2 tbsp maple syrup or 1 to 1 1/2 packs stevia (I omitted, but I’ve cautioned you before about my lack of sweet tooth.)1/4 cup unsweetened applesauce (60g) (Or sub banana… it’s awesome this way!) 1/4 cup milk of choice, creamer, juice, or water1/8 tsp saltHandful of chocolate chips (and a few for the top, too!)
