Steak and Mango Fajitas. BBQ Chicken and Peach Quesadillas. Peach season is quickly fading and I have been trying to enjoy them as much as I can before they are all gone for another year.

In fact this week I may have gone a little overboard and gotten a few too many of them! Not to worry though as I have been happily coming up with new ways to use them including in these tasty peach quesadillas. The recipe could not be simpler, you just need some leftover cooked and shredded chicken mixed in with some BBQ sauce, cheese, tortillas and optionaly, some cilantro, in addition to a fresh peach. Once everything is assembled you just need to cook it until the cheese has melted and then you are in a peach and melted cheesy heaven! The sweet, spicy and tangy BBQ chicken goes really well with the juicy peaches and ooey gooey melted cheese! So much melted cheesy goodness! Does this look good? Shredded Beef and Caramelized Onion Enchiladas. Our good friends were coming over for dinner and I wanted to make something simple, hearty and delicious.

Shredded Beef and Caramelized Onion Enchiladas

I decided to do shredded beef enchiladas with black beans and caramelized onions. I let the beef cook for hours in the oven – my house smelled so good. The enchiladas were great, the meat was tender, spicy and flavorful while the onions were deliciously sweet. I topped them with a dollop of sour cream and fresh cilantro and served them with a nice tomato and avocado salad (thanks Kyle).

The entire meal was a huge success and so tasty. 1 1/2 lbs of round roast (chuck roast is flavorful but isn’t as lean)1 pasilla pepper, seeded and diced1 red jalapeno pepper, seeded and diced1 7 oz can of whole green chiles reserve the juice1 tbsp olive oilChili powder, to tasteGarlic powder, to tasteCumin, to tastePaprika, to tasteOregano, to tasteSea salt and freshly cracked pepper, to taste4-5 cloves of garlic, minced1-2 cups of beef broth Preheat oven to 275 degrees.

It seems like the things I make most frequently in my kitchen, I skip over on the blog. We love this rice, and I make it at least once a week. Great as a side for anything Mexican, or even as a light main course paired with some of Elly’s World Famous Black Beans. I remember I used to be scared of cooking rice on the stove-top. Ummmm. Heck yes!! I made this recently for Tasty Kitchen and it was gooooood. You need to make it. Immediately. And… wanna hear something really exciting. Okay….here’s the step by step for Grilled Guacamole: You need to prepare either your indoor or outdoor grill. Once the avocados have some grill marks, throw a few slices of red onion on the grill to char. Next up, let’s grill some tomato quarters! Once we’ve got everything grilled and set aside, place the avocado into a bowl and give it a quick mash. Next, grate some garlic over the avocado. Be sure to get all that fabulous garlic from the bottom side of your grater. Next, juice a lime or two over the avocado. Add the chopped red onion. And then the tomatoes! Throw in some chopped cilantro. Season the guac with some salt and a few turns of freshly cracked black pepper. And serve it up with some of your favorite chips!!
