Broccoli Cheese Soup. *Update (10/2011): We continue to love this soup (and eat it often)! I’ve edited the recipe just a bit to enhance with a bit of salt and flesh out some of the details. Enjoy! I could sum up this post by the following statement from my husband while devouring this meal: “This is the ultimate perfect dinner.” Of course it could have been atmosphere since it had snowed all day and was the perfect night for soup, but still, when we were fighting over the last scoops in the pot, I knew this had to be a winner. Note: To make my life easier, while the soup is coming together, I put the chopped broccoli in a large glass bowl, cover with saran wrap and microwave for about 3-4 minutes. Ingredients Directions Simmer chicken broth and chopped onion for 15-20 minutes in a covered small saucepan, until onions are soft. Printed from Mel's Kitchen Cafe (www.melskitchencafe.com) Recipe Source: adapted very slightly from my friend, Liz K.

Broccoli Bites for Kids. File this under the Onion Soup Mix Recipe category, though there is no Lipton onion soup mix in site. I may even serve these at my next dinner party, they were that good! While babysitting for my 6 year old picky eater niece, I had to come up with a good lunch that would be fun for the two of us to make together. She is not a big broccoli fan (or any vegetable fan), but I told her we would add melted gooey cheese and form the patties with our hands. She was sold. Please don't laugh when you read this recipe, it is terrific and easy. I made it my own by adding homemade breadcrumbs and fresh chopped steamed broccoli along with lowfat mozzarella cheese mixed with the cheddar. Broccoli Cheese Bites (adapted from My Tasty Treasures & WholeSomeBabyFood.com): 16 oz. package of frozen chopped broccoli, thawed and drained of liquid (I used fresh steamed broccoli) 1 1/2 cup of grated cheddar cheese 3 eggs salt & pepper 1 cup of seasoned Italian breadcrumbs Let cool and enjoy!

Baked Garbanzo Beans Recipe. My kids love to snack. (Who am I kidding? So do their dad and I.) When I was pregnant with my third child, I went through a vegetarian kick and discovered tons of recipes that we loved. Baked Garbanzo Beans (Chick Peas) was one of them. As usual, in keeping true to my easy-to-make recipes theme, this recipe requires very few ingredients and is very simple to make. While the steps are easy and preparation is quick, you’ll need to plan to be in the kitchen for about 45 minutes and be able to check on the garbanzo beans every ten minutes or so. After you’ve drained and rinsed the garbanzo beans, place them on a couple sheets of paper towel and pat them dry. Add the paprika and chili powder to the garbanzo beans. Every ten minutes or so, shake the cookie sheet around so that the garbanzo beans move and don’t burn. This is a nutritious, healthy snack that I’m sure everyone will love.
