Eclair Pie. Today’s recipe is a classic from my childhood.

Eclair Pie

It was one of the very first recipes I added to my little recipe box as a girl. Of course, part of the reason it was one of the first was because it was one of my favorites to eat. I am a HUGE eclair fan. Love, love, love them. It is the perfect combination- crisp yet chewy pastry, rich vanilla cream, and rich and sweet chocolate glaze – DIVINE. They would have what is called anaphylactic reaction and even a smidgen of nut will have dire consequences unless immediate action is taken and we get them to the hospital...quick. My son , who is now 9, tasted a cashew just before he was three and it literally almost killed him. That has been the only time a nut, in any form, has ever entered his body. My daughter (6) had never tasted a nut or nut product until last year. She accidentally tasted a tiny heart from her cousins Valentine candy "loot" and it wasn't pretty. My kids also happen to be severely allergic to all shellfish. We have taught our children to respect everyone around them and what they eat.

With all of the above being said. These tasty bites are just perfect for you or you and your kids to whip up as a Valentines Day surprise for someone, or many someones, you love! Better Than Sex Cake. OK, it's not really, but if you need a chocolate fix this is it!

Better Than Sex Cake

I know that this is a pretty well known recipe and that there are many versions, but this is my favorite one. Besides anything that calls for loads of chocolate and a can of sweetened condensed milk is worthy of my blog! Better Than Sex Cake 1 box chocolate cake mix (+ whatever it calls for on the back) 1 can sweetened condensed milk 1 jar hot fudge sauce 1-8 oz container of cool whip 4 Skor* Bars, crushed (or Heath Bar) Make and bake cake according to box directions in a 9x13 in pan. .

The Baked Brownie with Pretzels & Toffee

I’m really excited because I’ve never been there before (neither has Kramer). I was a history major in college, so hopefully I’ll be able to see a few key historic sites while I’m there, as well as enjoy the (hopefully) cooler weather! The reason that we have the opportunity to go is that my father is going to be in town for business, so my mother is tagging along with him and since we live so close, Kramer and I bought Amtrak tickets to meet them there Friday night.

We’re only staying Saturday and Sunday, then heading off to New Jersey to see my Aunt Renée, her husband Kenny, and my grandfather (or as we call him, Poppa). I haven’t been to their area of New Jersey in years, so I’m really excited to return to the Motherland (I was born in Morristown, New Jersey). I had always wanted to make the famous Baked Brownie Before you check out the recipe, just a quick reminder!

Your ingredients. Melt together the chocolate and butter. Not Yo’ Mama’s Banana Pudding. Line the bottom of a 13x9x2-inch dish with 1 bag of cookies and layer bananas on top.

Not Yo’ Mama’s Banana Pudding

In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. I AM DEAD! Because of COURSE I went to see the Harry Potter Premier last night! Yes, I am just barely in the age group that grew up with Harry Potter. The first movie came out my senior year of high school....and two college degrees later.....we're on the seventh movie! Crazy! Okay, so my youth is totally showing.
