It seems I’ve always eaten hummus and tzatziki, I sometimes make these dips from scratch and sometimes buy them ready made, either way they’ve made up a large part of my lunches over the past 15 years or so. Seeing as we’re in cooler weather still and have a lot of gorgeous sweet potatoes around, I wanted to try a sweet potato hummus and also because, even my favourite things to eat need an upgrade every now and again. This dip tastes sweet and slightly spicy with a pleasing, subtle peanut flavour. It was a wonderful contrast with the cool, creamy and zesty tzatziki and crunchy, spicy pita chips. I made a triple batch, we enjoyed some with friends then I tucked them away for a day when time was short but appetites were big. Yesterday was the last day of spring break for the girls and they also had their 3rd ever Taekwondo class. I’m surprised at how much they’re both enjoying it and how well they’re both doing. They’re in separate classes with different instructors, but both girls were singled out last night to receive their first belt!

These garlic fries, win hands down as the best garlic french fries I’ve ever made. Plus they are baked – so I won’t feel too guilty if I make it every time I’m craving for some potato comfort. I may pretend that I choose to bake them because I am opting for a healthier alternative… but, while partially true, the real reasons lie in the cost of frying. I just don’t want to buy tons of oil (nor do I want to store semi-used oil). So, my cheapness saves me some unnecessary calories… which I made up for by eating a few sleeves of thin mint Girl Scout cookies. As you should know, I am all for cheap and delicious food, so I will be making these again (and again (and again)). Quite simply, the onion was chopped into 1/2 inch wide slices and then I separated them out into individual rings. One thing to note: you do want to spray the hell out of these with some sort of cooking spray before you throw them in the oven. But wrap these puppies in paper and serve them up with ketchup, and no one will ever be the wiser. Plus, calling them “oven baked potatoes” sounds incredibly dull and doesn’t do justice to a baked french fry that is crispy on the outside, soft and fluffy on the inside, and could pass as its traditional deep-fried cousin any day of the week. I started making these on burger nights a few years ago for a few reasons – first, because I’m not a big fan of deep-frying. Second, there’s no arguing that baking isn’t far, far healthier than frying, and it always seemed odd to pair a veggie burger chock full of nutritional value with potatoes straight out of the oil vat. Keep in mind that I have also used the veggie burger argument to justify “real” fries (“well, the burger is so healthy it cancels out the fries!”)
