Sometimes, I will see a recipe for the first time and it's like the heavens open up and a radiant light shines down on me. That's what happened when I saw this recipe for Shrimp and Grits Dressing from Southern Living. It sounded wonderful and perfect for Thanksgiving dinner. Last weekend, I decided to do a test run just to see how it would turn out. This was a huge hit when I unveiled it at our Thanksgiving dinner yesterday. Shrimp and Grits Dressing 1 pound peeled, medium-size raw shrimp 3 cups chicken broth 1/2 tsp. salt 1/4 tsp. ground red pepper 1 cup uncooked regular grits 1/2 cup butter 3 large eggs, lightly beaten 1 red bell pepper, diced 1 cup fine, dry breadcrumbs 1 cup chopped green onions 1/2 cup grated Parmesan cheese Preheat oven to 325 degrees. Bring broth and next two ingredients to a boil in a large saucepan over medium-high heat. Stir together eggs and next four ingredients in a large bowl. I always cut up my veggies before I start cooking. Enjoy!!
